How are those resolutions going? You may want to use low-carb cooking to help manage your diabetes but are not sure where to start.

Elana Amsterdam of the popular paleo blog "Elana's Pantry" has graciously gifted us with two cookbooks to give to our members! Paleo, for those that aren't aware, is a type of cooking that does not use grains or dairy while emphasizing meats, fruits, and vegetables. Her cookbook is a New York Times bestseller and has easy-to-follow recipes to make paleo cooking accessible to everyone.

Check out her Asian Stir Fry recipe here:

Here's how to enter: comment below with an example of one of your New Year's Resolutions and the steps you've taken to accomplish this resolution (bring a lunch to work, ride your bike more, etc). The contest ends January 31st so enter now!

Official Rules can be found here:

**Note: When answering, please do not make your post anonymous as we can not enter you into the drawing.

I have a difficult time sticking with diet and exercise. This year I have joined a weight loss competition at work to encourage myself to get started again. I have eliminated simple sugars, cut back on fast food meals, and have started going for light jogs on my days off. I snack healthier such as carrot sticks, or nuts. I'm also eating smaller meals and snacking between meals. I have already started to see these changes affect my blood sugar levels. Finding receipts appropriate for a diabetic that taste good enough for my family to eat as well, has been hard. Especially on my family.

SCouch 2015-01-31 15:27:00 -0600 Report

To eat more vegetables and exercise more. Not to lose weight but to lead a healthier life and by doing so maybe I will lose some but if not at least I will feel better with my food choices. I have joined a food co-op in my area where you get fresh fruits and veggies every week for a reasonable price.

Lose 50lbs this year just for myself. I want my blood sugar to be lower and I want to be to do things with grandchildren.

I have reduced my fried foods, no wheat or corn, gmos, sugar drank more tea no sodas and less red meat. Paleo diet I have heard is very successful.

I have met my weight loss goal so my current goal is to continue to improve my glucose levels through diet, exercise, sleep and stress reduction to the point that I might be able to stop taking Metformin. Even if that doesn't happen I am determined to live as healthy a lifestyle as possible for the rest of my life.

I was diagnosed Type 2 Diabetic November 2014. I have cut all sodas, sweets, and chocolate out of my diet, but it would be so nice to have a cookbook I can use, which would be healthy for me and my family. That way I can look out for us all.

My friends have tried the Paleo diet and have lost some weight. I've purchased a magazine of Paleo recipes, but would enjoy adding a Paleo cookbook to my large cookbook collection.

I like to exercise daily, sitting in front of a computer all day isn't healthy! I set a timer on my smart phone so I can remember to eat every 3 hours. So I've started to set my timer for stretching and walking to keep my circulation going!

NBer 2015-01-30 10:45:57 -0600 Report

To eat breakfast, and more healthy. And to walk a lot.
I am off to a great start with the food. Walking has NOT been as easy, due to weather, and being in a car accident 3 months ago.

I am bringing my lunch (could use some recipes to liven it up - hint hint!). Cooking has always been a passion of mine and a change in our diet would be great for me AND my husband :) I'm also getting good use of the "Fitbit" my kids gave me at Christmas, it's been a real treat tracking and watching my success.

To eat more healthier and try to cut back on the intake of food, start watching my carbs better. I have started eatting more glutten and yeast free product. I am now starting to slowly cut out using sugar and use Stevia more when I cook. The cook book would benefit my entire family. My parents are diabetics and both are on insulin. I would like to learn how to make good tasteful meals that are grain and gluten free.

My family and I have gone to an organic diet and now using essential oils. I can't believe how much it has helped! I am feeling more energized in the morning and I have not had a sinus infection at all since October when using the oils. The diet has made me more aware of what I am putting in our bodies with all this processed junk and preservatives that is in our foods. I have lost weight and my sugar has been under control. Haven't taken my metformin in a week.

I am taking advantage of a program at work - able to schedule phone calls with a RN and a dietician. The recipes on diabetic connect are wonderful. It would be great if I could win the Paleo cookbook so I can continue to work on healthy eating. Gail

My issue is that I am a meat eater and my hubby is a vegetarian. Both of us are diabetics. I struggle to get the right foods into my husband that is not full of carbs and enough proteins at the same time. It is a struggle to cook for both of us at times. Learning is a good thing for us.

Like so many people here, I'm ready to make a lifestyle change starting with a new way of eating, which also means, a new way of looking at food. I enjoy cooking, but I'm often enticed by how food looks, rather than if it's good for me. I was introduced to the Paleo way of eating last year through my daughter. It's changed her life and I know it can do the same for me and my family. I'm slowly eliminating processed sugar from my diet (I'm addicted to it) and substituting honey and maple syrup as sweeteners. That's a beginning that should've happened 10 years ago! My glucose numbers have improved tremendously just by doing that! I'm ready to make the switch to Paleo in other food areas, as well!

I'm a diabetic & like anyone else, I find it financially difficult to eat healthier. Well, my New Years Resolution is to try harder to eat better so I've stopped eating out on my lunch. I bring fruit & veggies with me to eat on my lunch break. I'm at a loss on things to fix & take with me. I think this cookbook would be a great way to find new ideas to maintain my resolution to eat healthier in the new year.

I have been struggling to find menus for me and my wife. Recently she was told to refrain from sugar (diabetes) dairy products (kidneys) and protein (gout). Needless to say, our menu is severely limited. Yet through our limited repertoire, we both have managed to lose some weight slowly but I fear that will cease without additional dietary assistance and inspiration. A Paleo cookbook would be extremely useful. revrr

I don't make New Year's resolutions anymore, beccause they get broken too easily. I have taken my health in my own hands, and have gone to 80% (maybe more!) Paleo in hopes to control the several auto immune diseases that I have. I have Diabetes, Celiac Disease, and probably Fibromyalgia, and eating gluten free and now Paleo, for the majority of the time, has helped keep all symptoms under control to a certain extent.
