COLESLAW....oh yeah baby!!!

Made coleslaw last night for the first time…I am a New Yorker by birth and love my DELI, which means I love my coleslaw by default..shredded equal parts of green and red cabbage..added apple cider vinegar, full fat mayo ( you can substitute low fat)…a little fresh dill, some dry mustard and a bit of splenda…I let it sit overnight n the fridge to soak up the flavors and just tasted it…SUCESS..and about 5 grams of carbs per 1/4 cup serving..( I didn't subtract fiber for net grams because well..I was too excited!!!)…tonight is cheeseburger and coleslaw night!!!!!!!!!

I love coleslaw also and it is part of my salad regime quite often. I like mine with a good bit of vinegar, and even lime juice instead of vinegar. Cabbage is a yummy and good veggie.

I love cabbage..made a cabbage and turkey sausage soup for dinner today…but it so low fat I was forced to wash it down with a piece of atkins cheese cake just to get the fat in my meal…oh how I suffer…please somebody make it stop!!! (grin)..

I cheat, I buy the bags of already shredded cabbage and carrot. It's a tiny bit more expensive than shredding it yourself, but the ease makes it worth it to me. I absolutely LOVE cole slaw. In the summer one of my other favorites is to take a head of broccoli and a head of cauliflower and just shave the tips of the florets off into the bowl with the shredded cabbage and carrots, toss in a small handful of sunflower seeds, and if I'm feeling really adventurous a small handful of dried cranberries. Toss on regular cole slaw dressing (same as you make essentially) and I have a little bit different "slaw". It's really yummy and it will last a good week or so in the fridge. I will have a bowl of that alone for a dinner in the summer, sitting in the back yard, with a glass of seltzer and a slice of lime as the sun starts to set… ahhhhh summmer :) hugs, heidi

I love coleslaw and do make a low carb version … so when looking at this recipe I was thinking more like a realistic 1/2 to full cup serving and totaled up the carbs 10 - 20 didn't sound right.

5 grams carbs a 1/4 cup seems high. a cup of cabbage is only 4 grams the vinegar and mayo are negligible … what am I missing?

I am going by what the recipe says online…soooooo..lmao…less is better but I would rather give a higher number than a lower one for people who REALLY hard core count carbs..

I've learned to like my homemade coleslaw now without any added sweetener. Made some to eat with my Friday night fish (fried/breaded fillets for my husband; for me, baked plain sole fillets with roasted tomatoes and zucchini and topped with Feta cheese—-yummy)

I only add one package of splenda..just to give it a touch of sweetness…but I can understand that some people just avoid artificial sweeteners for health reasons ..I know I should as well..BUT I am just not there yet…

I do use Splenda… usually in baking and desserts, just not in my coleslaw. I've weaned myself from much of the "sweetness" I used to eat.

My favorite coleslaw is any cabbage etc you want. 1 cup apple cider vinegar,
1 cup Splenda, 1/2 cup olive oil, 1 teaspoon celery seed, 1 teaspoon salt.
A medium head of cabbage. I put colored peppers and onions in it too.
It keeps in the fridge for ever. With my mixed fruit bowl, mixed nuts and
the coleslaw always in the fridge. It is easy to put a healthy meal together for one person. I usually have chicken drumsticks, beef, boiled eggs already cooked in the fridge too. I often go a whole week without having to turn on my stove.

I only put one package of splenda in mine…really don't like artificial sweeteners..but in some recipes it is just necessary…one package adds just enough sweetness to my recipe…a cup for a medium head of cabbage would just be waaay to sweet for me..

I use Apple cider vinegar with the mother. It is good for you but tastes awful. With the Splenda I can eat it in the coleslaw.
This is a huge bowl of coleslaw so not much Splenda per serving. I have been eating Splenda since it came out with no problems. Being diabetic, we all know sugar is poison to us. Splenda is the lesser of two evils.
