The hit of Christmas dinner, very very low carb...

Because I am on Atkins and am very carb restricted right now..I had to come up with a side dish that was BOTH very low carb and Christmas worthy for my table…It was the hit of Christmas dinner, with people asking to take home leftovers..I had to cut a piece for myself to have for lunch today and hide it in the back of the fridge…if anyone is looking for a side dish, or even a main course (it does have protein, fat and a tiny bit of carbs)…lock and load..this is a winner..

Spinach cheese casserole…( I tripled the recipe to feed the gathering)
2 boxes frozen chopped spinach, 10 oz each
•¼ chopped onion
•1 teaspoon oil or butter
•1 8-oz package cream cheese
•1 cup shredded cheese (cheddar or a mixture is nice)
•2 eggs
•1 teaspoon garlic powder
•1 teaspoon seasoned salt or other spice mixture to taste
•1-2 Tablespoon dry white wine if you have it around
•1 teaspoon lemon juice if you don't have the wine
•1 drop liquid sweetener or a pinch of a powder (just a small amount to balance flavors)
•2 Tablespoons grated Parmesan cheese (not the dried kind in the can)

Place in a 350 degree oven until everything starts to bubble and smell yummy…best to let it sit 10 minutes before serving…

Please post this in the recipe section hee as well so people will be able to find it later. If you need to calculate the nutritional values, I've used very successfully to get that info. Your recipe sounds yummy ! And congratulations for finding a lowcarb recipe that enabled you to adhere to your diet! Wishing you the best for 2015!

Oh..lmao..just mix all the ingredient together and press into a pan..then sprinkle the parmesan cheese on top//…you must completely defrost the spinach and squeeze out all the liquid..
