I've become a vegetarian again

I am now a lacto-ovo vegetarian after seeing a program on 60 minutes about a firehouse that now cooks vegetarian meals. I was vegetarian about 20 years ago and boy have products improved! In 3 weeks I've lost 4 pounds and my skin is clear and radiant. I also no longer feel bloated. Also, tofu costs less than meat. My sweet cravings are gone.
I know there are other vegetarians out there.

Okay, I went back to being Vegetarian again a few months ago. I know I need to lose some weight and exercise but I'm having trouble with what I am supposed to eat and not eat. I have searched the web for lists or books on the good/bad fruits and good/bad veggies. I know berries are supposed to be okay. Does anyone know of a book out there or a list out there regarding Vegetarians with Type 2 Diabetes?

I'm not a vegetarian, but there are times thats all I eat. exspecially in the summer. But I have always wanted to try tofu, but don't know how to fix it. Maybe, you could post some recipes? I would really enjoy that.

I love to cook, so I am embracing new recipes. I'll start posting them. Tonite I made creamed spinach, using silken tofu, parmesan cheese and milk to make the sauce.

I'm flying to Oregon on Thurs to see my dad. I've already researched menus for restaurants at the airport and other places so I know where to eat. My dad is a BIG meat eater I was worried about the carbs and my diabetes, but I'm eating tofu for protein.

How long have you been diabetic?

I don't have it. I'm a caregiver to my mother-in-law ans an advocate to my son. They both have Type II. Plus my man, has to watch himself, because of his mother. So we also have meal plans, just like his mother. She would never try tofu, but we have talked about it, and would like to try it. So, if would post some recipes, I would love it. Always looking for something new, but also healthy.
