has anyone tried using coconut oil in their diet? if they have what are the benefits and how do you use it?

I've not tried coconut oil as of yet, but have heard nothing but good things about it and plan to try it very soon. I've heard you can eat it straight out of the jar on the spoon, I dunno. I'll see soon enough.

Howdy Icefog.
There are many touting the benefits of coconut oil, but there is a small downside to using it when first starting on it. You need to be aware that too much coconut oil at once may give you extremely loose bowels. You need to build up gradually.

PS I use it on my feet in place of lotion and it works well.

I love coconut oil and have pretty much replaced butter and vegetable oils with it in almost everything I make. Eggs are delicious fried in it. I also make baked goods such as banana bread and cookies with it. The types of fats in coconut oil are helpful for weight loss and suppressing sugar cravings. If you want to find recipes that use coconut oil quite a bit check out any blog or website that is geared towards Paleo eating since they often emphasize coconut oil. Some of my favorite's are Elana's Pantry and Primal Palate.

Ccoconut oil has been my number 1 choice for frying, grilling and sauteing for several years now. (I don't bake, but it can be used in place of vegetable and seed oils in baked goods)

I belong to the organization TOPS (Take Off Pounds Sensibly) and get weighed each week at our meetings. This past week, I was the "lecturer" and read a piece I found in Reader's Digest abut Coconut Oil that said that it has very good benefit in many ways. I plan to try it when I go shopping to the health food store as you only want organic and not processed coconut oil. One tsp is enough per day to help you in many ways. I will find the article and write more at a later time if there is anyone interested.

I have been using coconut oil Organic is by Spectrum at Whole Foods and use this to sauté vegetables. Also, there is a Coconut Spread by Earth Balance you use in place of butter it tastes great on toast. But remember it is still oils and go easy on them.
