Does anyone have a really good recipe for a dessert that is diabetic friendly? I'm always in charge of the dessert for our Thanksgiving Dinners and I hate that my husband and I can never really enjoy it :( I don't want people to feel they are punished because of our disease but I want to be able to enjoy in the gluttony without feeling we need to monitor the next 3 days on hyper awareness! Any help is greatly appreciated :)

Hi Guys! You are all so awesome. Thank you for the replies. I actually have my recipe that I did for YEARS that I'm in love with. Its a white chocoloate pumpkin mousse! (just what the dr ordered right?). Anyways, I'm trying to find something similar to this that is not going to put us in a diabetic comma… :(

It's really really bad. Takes condensed milk, whipping cream, regular cream…white chocolate shavings… etc… I mean, one spoonfill is probably all the sugar our bodies need for a week :(

I like making something very fu fu (my way of saying extravagant…I'm latin ;)

I went through your suggestions and they seem great… I just want it to be something with pumpkin to keep it somewhat within tradition… I might try the pumpkin panna cotta! If anyone else has any suggestions along the line of what I've made in the past let me know. What I was also considering doing is just making my tradition, and then making a light dessert that just me and by hubby and father in law will eat :(

I'm personally having a small slice of pumpkin pie this thanksgiving. I'm not having mashed potatoes or stuffing (or if i do have stuffing it will only be a small teaspoon full). I think, for myself, punishing me year round is going to be a hopeless feeling. Just a thin slice of pumpkin pie is not going to kill my carb count for the day if I watch the rest of the carbs during the day.

Heidi, you might be able to have a larger slice of the pumpkin pie if you eat only the filling and leave the crust on the plate?…or, make the pie yourself and replace the sugar with Splenda (if you don't object to using Splenda)…which will further cut back on it's carb content.

I make Sugar Free Strawberry Mousse. Has no carbs and unless I tell people it contains no sugar, they enjoy it. I also will buy no sugar added Apple Pie. The sweetness comes from the apples. I take the No Sugar Added label off the container and no one has noticed the difference.

I don't feel the need to monitor the next 3 days after a holiday. Just because the food is being served doesn't mean I have to eat it. I am responsible and I control everything i put in my mouth. Check out the recipe section. There are tons of desserts there.

There is a great one here called Lemon Whip I use sugar free whipped cream in it and I have made it like key lime and pina colada.

I bet you could make it into pumpkin whip for the holidays with some pumpkin, nutmeg, cinnamon and allspice. Maybe experiment with it a little first. Serve it up on custard dishes with a nice garnish on top of crushed gingerbread cookies and you have a winner.

There is another one that I have not tried yet, but it's going to get a work up this coming week. It's Pumpkin Pound Cake: The reason I got excited about this one is that it uses almond flour which is way better than wheat flour for cutting carbs. It sounds great and I cannot wait to give it a try.

There is an extensive recipe section here on DC and if I recall there is a dessert section within. The recipe section link may be found in the upper blue band the second link in from the left. I am sure you will find probably more than one recipe for dessert which would satisfy both you and those who do not have diabetes without feeling deprived.
