Diabetes and the country diet

I have people telling me that I should eat this and absolutely don't eat that. Well I was raised on beans, fried potatoes, and cornbread, and whatever was in season from the garden. Meat was a luxury and mostly deer, squirrel, rabbit, or chicken. And that was on special occasions. My parents raised 8 kids so we ate what was available. Now that I am diabetic I have had to reinvent new ways to prepare foods. I eat a lot of steamed veggies. Don't eat deer, squirrel or rabbit anymore and only the white meat of chicken. The only pasta I eat is mac and cheese but very rarely eat that. I hate spaghetti. Yogurt taste like spoiled milk to me. I have started to bake most of my meats and use garlic on most meats and in soups. I will eat fish but no other water creatures for me. I only cook with vegetable oil but never add it to beans, soups, etc. So when someone tries to tell me what and what not to eat I just laugh and say moderation and portion control..

I was raised in a household where desserts were normal at both lunch and dinner. Diabetes imposes dietary changes in our habits if we wish to maintain control. Congratulations for realizing that and taking the steps you have to eat better. I've found that some yogurts are indeed "sour" tasting (Cabot brand is one I don't buy). I do eat a lot of the Fage brand plain yogurt which, to me, has a smoother, creamier taste…but we all have our likes and dislikes. I've tried to like Brussels Sprouts because they are so cute but, to me, the taste is bitter…so, no Brussels Sprouts on my plate, thank you very much!

Yeah I like steak and pork chops and instead of frying them I bake them. I put them in a casserole dish. Put potatoes, onions, and carrots in with it. With a little pepper and garlic and very little salt, delicious. If I have potatoes, I don't have bread.
