Dont know of any that has no fish or mushrooms in them but I do have two that does not contain a lot .Thy are "You Dont Have To Be A Diabetic To Love This Cookbook" by Tom Valnenti and Andrew Friedmanen. The other is Eating Well With Diabetes by Mary Jane Finsand, Edith White,M.ED and Karin Cadwell,Ph.D., R.N.
Could the good recipes you find that have fish in them could you use chicken?
I don't use cookbooks, but I have a favorite recipe site that is great for low carb recipes:

I am checking out Skip's link… I love to cook & bake and love seafood but 3 of my 4 children don't and I am always on the look out for family friendly recipes.
I don't bother with cookbooks anymore and I do a LOT of cooking. There are so many recipes sites on the internet now and most can be searched to help you avoid those recipes with fish or mushrooms. A lot of the recipe sites also give nutritional content. The more I study recipes and cooking and cooking techniques I am convinced that "diabetic recipes" are really those foods prepared with low fat, higher fiber, limited carbohydrates and little or no refined carbohydrates. I love experimenting with "regular" recipes to make them diabetic friendly. Good luck and Bon Appetit!
Hey there, I wish I had a answer for ya. My fiance has a allergy as well, and I just had not been able to try eatting fish..I too…I thought I was also allergic but just dunno for sure…have not tried, And yeah most cookbooks focus on that in your diet so its gotta be in there. If you find anything lemme know please! And of course I will you as well! Good luck! Love yasssssssss Sheila
