as someone who eats 6-8 eggs a week I was glad to see this article …
I found add eggs to my diet was a delicious way to add protein and some low carb calories all at the same time.

Hi Steve, just found your discussion and as one egg eater to another I
would like to add this one thing. My carteologist informed me that the
idea they used to have that yolks caused cholesterol is an untrue statement. Studies have found the egg is pure protein and great for us.
So I say eat your whole egg and as often as you like. Good topic Steve.

true… the cholesterol we need to worry about is the cholesterol our bodies produce … not the cholesterol we eat

Eggs-ceptional article. (sorry…just couldn't resist)
My Dad, who was diagnosed with diabetes at age 61 in the early 1950's, ate a soft boiled egg each morning as part of his breakfast. He died at age 81. I don't think eggs hurt him at all.

Lou, you must have been a fan of Penguin on the TV series Batman in the late 60s. Sounds like something Penguin would say Qvack' Qvack' Qvack!

I'm just an avid "punster"…I love words and word-play. My friends groan! I picked up a book years ago called "An Almanac of Words at Play" by Willard Espy (I think). I still get lots of laughs from it!

I remember my first dietitian … she flat out told the class if we ate more than 1 egg a week, we'd die a horrible death. I was waiting on her to tell me I was then going to go to hell. I got up and left and I refuse to go see another one. I love eggs. Everything in moderation.

We have chickens and I enjoy my own fresh, organic eggs. I have a scrambled or over-easy egg almost every day. It's a great food!

and here is my current way to prepare them:

All these years I thought this was the wrong way to cook my eggs...that generally are very similar to these. Who knew? LOL

I took great caution to make sure I had perfect whites every time I fried eggs … honestly to the point of making scrambled on days I felt I wasn't up for the challenge.
i make my crispy eggs with coconut oil or butter and will have 2 or 3 on a piece of toasted rye or sourdough with either some ham or kippered herring.

Perfect. I love cooking in coconut oil and I love eggs. skip the toast, I am not a toast gal. Though on rye it sounds very yummy.

back in "the good old days" and being an island boy at heart my favorite was to eat them on white rice.with fried spam

"A kipper is a whole herring, a small, oily fish that has been split in butterfly fashion from tail to head along the dorsal ridge, gutted, salted or pickled, and cold smoked"
not just delicious but packed with protein and a great source of Omega 3 and DHA fatty acids

Even better when you get them fresh from local chickens! Reminds me, I need to go and get some more.
