Zucchini Noodles

Peel a zucchino. Then, use a Julienne peeler along the zucchino lengthwise. Continue until most of the zucchino is peeled. Continue on to the next zucchino until you have peeled all zucchini. Now, you are finished making the noodles. It is that easy.

Place the noodles in the microwave oven for 5 minutes or less depending upon the quantity of noodles. They should be slightly firm. You can also bake them in a conventional oven. Now top the zucchini with your favorite sauce such as, tomato, basil, garlic and oil, etc.

Calories: 20
Total Fat: 0
Total Carbohydrate: 4 grams
Total Protein: 2 grams

202 grams (1 cup) of wheat pasta contains:
Calories: 246
Total Fat: 6
Total Carbohydrate: 43 grams
Total Protein: 5 grams

something really handy for this is a spiral vegetable slicer. "noodles" come out a bit thicker than with a conventional peeler.

I love zucchini and never thought of making it into noodles. Thanks for sharing this… will try making these once my feet and ankles get healed up;-)
