Mom's having rotator cuff surgery, any favorite diabetic recipes I could make for her ahead of time?

Mom's diabetic & is having rotator cuff surgery. I want to try to make some food that I can freeze & she can just heat up & eat that will help her heal,

Any suggestions on some easy recipes?

I find soups and stews work really well in the freezer. I also have had great success with fried eggplant slices. You just pop those in the oven to heat them up. I have also made things like sloppy joe meat or taco meat and enchiladas are very easy to do. Just make 2 in smaller dishes so they are portioned.

Something I also always keep on hand is a tub of salad. I make it ahead and it will last about 4-5 days. The trick is to not put "wet" items in it like tomatoes or seeds from cukes. Also adding red cabbage helps keep the lettuce from turning brown too fast.

Make her up a batch of egg salad or tuna salad to keep at the ready to add to her salads, stuffed in celery or for a sandwich.

Another thing might help is to keep a container with cut up fresh veggies in it. I put a little water in the bottom to keep them crisp. But if she has some favorites of those, that would help her not have to cut stuff up.

Are you or someone else going to be with her during her recovery. That arm will be in a sling for at least 2 weeks or more, and I suggest something simple to eat with only 1 good arm. That is what my hubby had to do for me. Eating will be a challenge for her as well as many other things.

it's been nuts, she's had 3 delays in this surgery 9:45, then 3pm then 5pm then 5:45. at least her sugars were down to 85. the first delay was her problem, she thought they told her to eat a few crackers when she took her insulin, but she wasn't suppose to. . Anyway surgery is going on now. so I hope she does Ok. I left to get her oxycodone

There are all kinds of diabetic recipes on this site. Why not ask your mother what she wants to eat instead of making dishes she may not like or want? I just had surgery and the good thing about my friends are is the fact that they are asking me if I want or need anything.

When I was caring for my mom, I always asked her what did she want to eat. I didn't just cook something because she may not want it and because she was my mom, I didn't look for quick and easy meals to cook. She loved and took care of me from birth and if she wanted me to be a short order cook for her, this is what I did.

Do you have a family favorite chicken recipe? You could make that and portion and freeze in meal-size containers that she can reheat. Or perhaps a summertime bean salad with different types of legumes and vegetables? ~Lynn @Glucerna

There are some fantastic recipes here on this web site under recipes tab but other than just meals ready for her you could have veggies ready and single salads she just pops the top and grab a fork also some cut up fruit that's just ready to eat we have to do that weekly for my grand mother or she would just eat bread and butter she doesn't like to cook or prepare food anymore since her hip surgery
