I also have celiac disease. So now my diet if there is one is totally out of control. I was just recently diagnosed with it, so i am still adjusting. I have been diabetic for over 8 years now. Now i have to readjust my diet once again. Now i have to cut out wheat, barley, and rye.

You can also try healthfood stores, such as GNC stores, look online for health foods and see what shows up. Good luck !
I don't know if oats are OK on your diet, but it's one of the easiest of grains to make into flour. Just whirl oats in your blender to create oat flour.
Can you use quick-cooking oats (like is used for oatmeal) ?
I use old fashioned oats. Quick would probably work, but I wouldn't try instant types. Also since then, gabby posted a recipe for cream cheese muffins that though high in carbs, uses whey protein powder instead of flour. Perhaps the powder would be another solution. elfin
Oh my, hummm try to locate a co op store in your area, they carry almond flour and things,
you might beable to get your main items there.
If no co op then try on line.

I would look into a whole food market or a co op, there has to be things you can add to diet that will be good and not hurt you.
