Summer Veggies?

Summer is here and out comes our grill. I love grilled vegetables, but am not sure what the best summer veggies are. I would love to hear what your favorite veggies to eat in the summer are?

I love zucchinni squash with Montreal Steak seasoning, a little olive oil and place flesh side down on the grill for a few minutes to get some smokiness and grill marks. It's great! Love raw carrots, cucumbers and tomatoes with a lemony vinaigrette or Greek yogurt dressing…:-)

I love cucumbers and onions. You just clean and slice the cucumbers and onions and put them in a bowl. Then mix up vinegar and splenda until it is to your liking. Pour that over your veggies add some salt and pepper, cover it and put it in the fridge for a while. Then you have some quick yummy pickles that are really good with grilled chicken, or any kind of grilled meat.

Summer is not here yet. I am waiting for Maryland Sweet Corn (not giving up my corn) clean it and put it on the grill and I am happy for the rest of the day.

Tip for grilling onions. Slice onion, soak a skewer in water and insert through the slice of onion and it will not come apart on the grill. Goes great on a burger or steak.

I Love fresh veggies. I guess my favorite is old timey yellow crook neck squash, (any way you want to cook it, even pickled) I like all the other squash too. GRILLED: Portabella mushroom caps stuffed with all kinds of good stuff, Bell peppers, Italian peppers, New potatoes, tomatoes, Asperagus. sweet onions, Jalapeno poppers and the list goes on. One of my very favorite though is Fried Green Tomatoes, I know fried right, but I don't eat them as much as I would like to. My mom made a vegetable soup that was to die for, she put everything in it but the kitchen sink. She would can it and we would have it to eat when the fresh veggies were gone. Of course all of these veggies came out of our garden, no harmful insectisides,
Grilled vegetable sandwiches, cassaroles and salads are awesome too. Lets face it. I LOVE FRESH VEGGIES, and FRUIT..

Oh me too Trudie, we did the same thing with our veggies straight from the garden, we would can some and put some up in the freezer.

Oh wow, I like well let me explain the ingredients first a kielbasa sausage, sliced about 2 to 3 inches and halved cabbage, carrots, red, and green belle peppers, onions with about a tablespoon on olive oil and enough water to cover the bottom of a pan slice all the veggies up to your liking and put in a 8x13 in pan add your favorite seasoning mine is garlic salt and mrs dash seasoning and black pepper and put on a grill covered with some aluminum foil and just keep check on it when tender oh and I also put in a few small red potato's quartered. It takes a little while on grill, but also can be put in oven.

I like to go to the farmers' market and buy whatever vegetables are in season. The farmers often have great recipe ideas as well. Does anyone belong to a CSA (Community Supported Agriculture) program? it's a fantastic way to get fresh, local veggies weekly and help support local farmers. ~Lynn @Glucerna

I don't discriminate … never met a vegetable I didn't like
Skewer them … brush with some olive oil and your favorite seasonings … and throw them on the grill.

Portabella mushroom caps. The big ones are great on the grill and you can skip the steak. Just add a little olive oil, season it and it is so yummy on the grill. I also love zucchini on the grill. I marinade them in my favorite marinade and slice them about 1/2 inch thick. I also love corn roasted on the grill, but can't eat too much of that. And of course there is always a veggie kabob. I will blanch things like cauliflower and broccoli, but everything else can go on the skewer, brushed with a little oil and season to taste. Nothing is better than grilling!

another recipe::;

2 Yellow squash Julienned cut
2 zucchini Julienned cut
1 red pepper Julienned cut
1 small onion sliced thin
3 Tlbsp oil
2 Tlbsp vinegar
1 Tlbsp mayo
1 TLbsp sugar or Equal or other sugar substitute
1/2 Tsp. dill weed
1/2 Tsp. garlic salt or powder
1/3 Tsp.celery salt
1/4 Tsp.pepper
Toss all together

This recipe was given to me by a worker of a local Steak restaurant. They had it on their salad bar !! It's delicious, You have to try it.

I have a good recipe for grilled veggies on the Grill.Here's a recipe for you. It's good and good for you we have it a lot in the summertime when stuff is fresh. It's Sofa King good
Take a tinfoil pie plate and line it with foil wrap, no dishes to wash.
1 Zuccini (medium size)
1 whole tomato cut up in chunks
1 green pepper cut up in chunks
1 onion sliced
1 small hot pepper (to taste)
A small hand full of fresh basil leaves
A big pinch of oregano
A half can of beer
Half a dozen breakfast sausage links (or whatever you like)
Throw it all in the pan, (mix it up good so the tastes blend) put the spices and the beer on top. Fold the foil over the top to keep the steam in. go out and light the gas grill and place it on top for about 45 minutes on medium heat or until you can smell it all over the yard, it's done. Serve it right from the pie plate in sterofoam bowls with a little grated parmesan cheese on top.
When your done wrap everything up in the leftover tinfoil and plate and drop it in the G can. Dishes are done sit back and burp, enjoy.

I Love summer veggies… Zucchini, Butternut squash, yellow squash, Tomatoes from the garden, Pole beans, leafy green lettuce, OH, and Swiss Chard. My husband started our garden, it's not big, but big enough to hold our favorites. I never knew about Swiss Chard when I was younger, until my mother-in-law grew it in her garden. You can steam it or even fry it in olive oil with garlic, Yumm.. I like the zucchini in breads, but thats a no-no now, so I fry it in the pan with olive oil, I laso like to make a Rattatouie with all kinds of summer vegetables.

Romaine lettuce cut length wise sprinkled with a little salt, pepper (maybe garlic) and a little olive oil, laid face down on grill for a very short time. Very yummy. I also like tomatoes, squash, egg plant, peppers and onions
