I know that skim milk is largely used for weight loss, but are we in danger of lacking nutrients by using it. And if you drink too much a day, can that be a bad thing?

Skim milk has the same nutrients in it as whole milk or any other kind. The only difference is the fat content. Milk has 12 carbohydrates per cup so if you are doing carb counting you need to include that in your totals.

I don't know the answers to any of your questions but I just wanted to say that I drink it whenever I feel like it and as much of it as I want. My doctor is extremely pleased with my A1C and other test readings, so I can see absolutely no reason to give it up.
