I am not wholly vegetarian, I do like meat on occasion, I prefer fish and poultry, eggs and milk. However, I do prefer green and leafy veggies over meat. Unfortunately, at the present, I live in a situation where I don't get enough. That will soon change.

I have cut out all Beef from my diet..well, except for an occasional Filet Migon..say once every 6 months..it is a food passion for me..But No other Beef at all..I eat Fish,Chicken(breasts only),Turkey,No fat Pork chops, and ham on occasion(97% fat free, reduced sodium).Otherwise I eat Veggies,Veggies,Veggies & Fruits..The Veggies I steam fresh or frozen and I do have an occasional Egg but mostly use egg whites.I eat only Basmati rice & Coucous and for my Pasta I use Barilla Plus(Multi-grain)Loaded with Omega 3's.
I take vitamin supplements..D3,K,Calcium,a Multi vitamin,Super B's,Ocuvite(for the eyes),and Omega 3. As for Breads I only use Multi-grain breads and ocassionally Rye(Seeded). I eat lots of Legumes, especially in the Soup department,I make 15 bean & Ham soup at least once every 2 weeks and that with a tossed salad is usually my lunch. I also eat a lot of Tomatoes and make a Seafood chowder that is also good at Lunch time.
The biggest food help I have discoverd since going on this journey has been the addition of anything Sour to my diet..Lemon,Lime,Dill,Vinegar,Sauerkraut(I have a dish of this everynight for dinner..no matter what I have eaten otherwise..I think it is a miracle food..LOL)I make Porkchops w/Sauerkraut at the beginning of every week, making extra Kraut with it..then use the extra in small portions every night at dinner..and for me it works at controling the Morning BS's. Another biggy is I make my own Vinegar & Oil salad dressing, using Red wine Vinegar,Good Seasons Recipe mix,Lemon Juice & Smart Balance Omega Oil..I make it in the Good Seasons Cruet that is marked off for all the ingrediants and I also add Italian Spices of my own to it..sometimes extra dill too..you can make it however you like really..but it has helped me keep the highs at bay for sure.I honestly feel that adding more Veggies to the diet is very beneficial and Heart healthy as well.

I am a vegetarian, not vegan, and I find this diet to be really difficult. A lot of the foods that I used to eat all the time such as pasta and rice and yes even some legumes now send my blood sugar thru the roof. It is very hard for me. :) I am still finding my way thru this diet. I started eating more eggs when I had to give up my pasta and grains and that raised my always low cholesterol to a point where I have to now take cholesterol meds.

I am also a vegetarian, gradually got here. I don't have the issues with the legumes raising my blood sugars. I still eat pasta but at home I use Dreamfields. It doesn't raise my blood sugar like regular pasta. Rice, I use Basmati rice which for whatever reason doesn't raise my sugars like regular white rice. I still limit my serving sizes and fill in with vegetables and fruit. I eat eggs once a week and I drink milk too. Just don't like meat anymore. Nothing political about my decision and it might not be forever but for right now it's where I'm at.

In the last few days I've had vegetable enchiladas, vegetables with garlic sauce, pumpkin pancakes, last night I had a huge salad with the works (all vegies) and a little dressing.

Seems to be working for me oh oh update Judy has discovered something that could be a problem… LOL I had a Burger King Veggie Burger today and I loved it!!!
Need to drive away from the drive thru… LOL

Can I become a "vegetarien" but still have meat once a week?(LOL) I know if my mind says I can't eat meat I will crave it. I probably can go without it but when something is taken away from me I want it even more…Debe

Debe, You can be a person that eats mostly vegetarian meals but still likes to have meat once in a while. No need to label yourself.. lol Food choices are personal. I only like meat that doesn't taste like meat… highly seasoned or breaded and fried and dipped in something.. so I decided that it wasn't worth it for me right now. my tastes may change again and I'll go back to it. You can pick any degree of vegetarianism that you like though, there are many variations and some eat fish!! So just eat what you like and don't deny yourself or you'll want it!! :)

Love ya

Hi Debe! Nice to see you again too.

Judy, if you like veggie burgers, try the Greek Boca Burger. It has the protein in it plus feta cheese, calamata olives and greek seasonings. I love them. I also have a great, easy recipe for veggie burgers that are made with chick peas, black beans and great northern beans plus lots of good veggies and seasonings. I always make a triple batch and freeze them into individual patties. Then it only takes minutes to cook them in a skillet with a little olive oil. I will find my recipe and post it for you if you'd like. They are very flavorful. :)

Thanks, I'd love the recipe for veggie burgers. I found one and will be making some this weekend but I'm always up for a new recipe. I decided to make my own because in looking at the ingredients label at the frozen ones I was not happy. In the health food aisle and they have so many additives I won't even buy them… ackkkk So I guess Burger King Veggie Burgers are going to be a 'once in a while'…

Posted in Recipes today for you Judy. No chemical additives here! They freeze just fine too.

For those that dont know, Guy Fieri has a sister Meghan that is vegetarian. I have tried every recipe that he has showed on his program that is one of Meghan's recipes and they have all been excellent! My suggestion if you want more veggie recipes from her is to go to Guy's webiste at the Food Network. You will find more of them. ;)

I am no vegetarian by any means, we raise beef, pork and poultry here and eat what we raise however, I did a little research on this subject and found a few websites that were informative on the subject so here they are:

(this one is a video presentation on vegetarian diabetic eating)

this last one has several categories, not all necessarily vegetarian style but I found this information interesting as it includes diet's for children with diabetes and native american diabetics as well.

I hope someone finds this information helpful on this subject!

I think that is a great question, not that i want to give up meat completely but I would like to find new ways to add even more veggies to my diet.

Anonymous 2009-01-03 10:16:20 -0600 Report

I am so glad you asked this question. I have been wondering the same thing. I want to cut out all meat except chicken and fish and load up on veggies and fruit, and whole grains. I hope someone answers you because I would love to know.
