I would like to cook the same meats, red meat, chicken, fish but need help making basic side dishes. I don't cook with a lot of spices so simple is better. Any suggestions for rice, potatoes, pasta. Trying to cook for my husband and son who are picky.

Howdy Anon,
My recommendation would be to skip the starches most of the time since they raise your Blood Glucose (BG) levels quite high quickly.

You might try quinoa ("Keen wah") as a substitute for rice (know there is a recommended proceedure to follow before boiling).

One can find also noodles made from mushrooms, and for a sub for white potatoes, try roasting and then mashing cauliflower.

It may take a bit of time to get used to new foods but if your hubby and son love you it might be a good time to sit down and have a talk with them about your need to change the way you eat due to your Diabetes.

Praying God's best for you and yours

Why don't you use spices? I agree with Jarett, your diet is more important than their's. Cook dinner and if they don't eat it, it is their loss. At lease you will be eating a healthy meal.

Well if you don't like to cook with a lot of spices, I guess all you can so is add shredded cheese, parmassean cheese, butter, and sea salt or whatever salt. Why don't u like adding spices? Is it because you're picked or ur kids or husband?

Rice try cheese. Potatoes roast salt pepper garlic. Pasta Italian dressing with green, red, yellow peppers. This may seem mean sorry. Your diet is more important than there pickyness. If I'm cooking that's what's for dinner.
