What recipes would be welcome here? I mean, is there a certain carb amount to stay below on?

For example, I make a gluten free "lava cake" but each serving (4) has 28.8 carbs, 5.61 fibers, and 9.52 protein. Would that be too many carbs for you? Just trying to get a feel for what I should post and what I should just keep for me.

There is no amount. Post the recipes and let people decide it if is good for them. I modify most recipes anyway. I do it with the ones posted on this site.

Diabetes is different for each person so are the amount of carbs each person consumes. Recipes have all kinds of carbs, protiens in them. I have several diabetic cookbooks with the amounts you listed. I don't do gluten free and I have no intention of ever doing it. There may be people on the site who would love the recipe so why not share it?
