Spelt Flour Test

About a month ago I tried out Spelt flour as a Cinnamon Muffin. Tasted wonderful…BG wasn't that wonderful…sigh.
Hubby happily devoured the leftovers.
After a bit of thinking, came up with some modifications. Since almond flour is safe for my BG I decided to mix it with Spelt flour and try again.
I didn't figure in the carb load of my usual ingredients, 2 1/2 Tbsp butter, 1 tsp cinnamon, 1/4 c almond flour. pinch salt, 2 Tbsp splenda, 1/4 tsp vanilla extract, 1/4 tsp almond extract, 1/4 tsp baking soda, 3Tbsp sour cream, and 1 lg egg. But counted the carbs for the 1/4 c of whole spelt flour (25 g) and 2 tsp honey (12 g).
Mixed it all together and cooked it in a pie pop baker. Made 27 mini pancakes. The pie pop maker wells are 1 1/2" in diameter and very shallow.
BG 102 at 9:15 PM. Then I enjoyed 7 mini pancakes. BG 107 at 9:45 PM
Next BG was tested every 15 min for 2 hrs.

With only about a 20 pt spike recipe is a keeper. Way better BG than with a spelt flour only version I think it was a 50+.
Next try I might decrease the Splenda and the honey. I was just wanting the slightly too sweet taste of a cinnamon roll.

Hope others start sharing their kitchen adventures.
I really missed playing in the kitchen. Finally am figuring out how almond flour works. Made a substitute for a pizza roll using the same base and switching out garbanzo bean flour for the spelt. The cinnamon was switched for garlic, onion, oregano, italian seasoning, fennel, and crushed red pepper. Then tossed in a good handful of shredded italian blend of cheese. Hubby is happy I am back into cooking, especially since no damage to self or appliances has occured of late.
