Sorry, I'm not buying this. Diabetics have difficulty metabolizing carbohydrates because their pancreas is not secreting sufficient insulin either because their pancreas is broken (Type 1) or they are over weight and their pancreas can't produce enough insulin to feed all those extra fat cells (Type 2). A diet heavy on protein, light on carbs is the best, in my opinion, diet for a diabetic. I do not understand how a vegetarian (relatively high carb) diet can be beneficial to a diabetic (type 1 or 2). Might be fine for a non-diabetic, but not otherwise. My experience after 46 healthy years of T1.
