A Romaine salad with onions, tomatoes, baby carrots, shredded cheese.Sometimes with some small cut pepperonis.

I wasn't hungry. Just ate Kraft Dinner and strawberries. Haven't eaten KD in a long while. Enjoyed it :)

Still on the camp food diet. I just look at what they have and pick and choose my carbs. it is tough when they serve potatoes, corn, and roll! sometimes I just eat the meat,

I'm in the mood for a chicken fajita salad dressing on the side, with fresh fruit , I'm cheating tonight and ordering it, this one restaurant takes it easy on all the fattening fixings , so it's a favorite of mine , I leave full and happy I did not over indulge:)

Tonight I had oven roasted chicken breast with oven roasted vegetables and a side of a cup of rice mixed with veggies as well! Can't get enough of my veggies and as a diabetic, that's about all you can eat! (Protein and vegetables) :)

Oh bun10, i don't eat meat the schnitzel was for my other half. I agree, way too much starch! I had soy chicken lol that wasnt as exciting to talk about though! :-)

Katykakes, sounds yummy but schnitzel and/or potato dumplings would be too much starch for me. My blood sugar would rat me out. Lol I see my BS meter as whiny tattle tale. Catches me every time!

Forsakes alive, I love TV dinners. So convenient but I have a hard time finding any with 480 gms or less of sodium. That's pretty much my sodium limit. Stoufer's makes awesome comfort food. Wish it didn't have so much salt so I could enjoy it. They use white rice and noodles, too. I stick to brown rice and only Dreamfield noodles. I stand in front of the freezer case and I drool at the pictures of their casseroles when I shop. I envy you!

Silvia, Quinoa, (pronounced Keen- wa) is awesome. Add some colored peppers, onions or mixed veggies to it. Use no salt bouillon in the water. So many fun things you can do with it. Plus, it's a protein/grain type thingy.

$3.99 for a lobster tail. What do you think , Nick? I was kind of going on the principal of "good things come in small packages". It was more of a "lobster tasting" lol

My breakfast is usually 2 eggs, I pc. of toast with peanut butter, and 1/2 banana. Lunch is a mixed green salad with fruits, vegetables & nuts or chicken. Dinner is usually chicken or fish, steamed or sauted veggies, potatoes, yam or beans and a piece of fruit. I rarely snack unless my sugar drops between meals. I generally keep it pretty simple. :-) Last night I tried quinoa. It was very good and did not cause a spike.

I had a small piece of ham, beans, beets and carrots with onions, and a mini sweet potato. Plus, an iced tea. Funny thing, Nick, last Sunday I had a small lobster tail, scallops and spinach. The lobster tails were on sale…probably because of their minuscule size! Hahaha. There are small portions and then there are these tiny little lobster tails probably too small to harvest. Lol Oh, well, at least, I'm sticking to portion control. ;) In Publix grocery produce dept, they sell about five mini sweet potatoes in a steamer bag. So tender. So easy. A little butter and a sprinkle of cinnamon. So yummy!

Standard Monday-Friday for me is a mixed green salad with some form of protein – bunless hamburger, a few meatballs, leftover chicken, etc.
This weekend we’ll do a Turkey Salisbury Steak w/ light mushroom gravy, just a half serving of tiny creamer potatoes and some asparagus with lemon pepper. Our local coast shrimp is on sale so Sunday will be grilled surf & turf with a 4oz. tenderloin with a mess of grilled zucchini squash.
