This has always confused me. Isn't carbs & starches the same thing???
I was making a homemade star bucks lol, using all sugarfree ingredients, water instead of milk, using creamer.
But it's showing I reached 28grams of carbs. Don't sound good!

There are complex carbs (potatoes, rice, pasta) that takes longer to break down, then there are simple (sugar, soda, ect) they cause pretty quick spikes, then you usually see a drop.

4 tsp sugar-free vanilla creamer
4 tsp Splenda
8 tsp cocoa
8 tsp sugar-free French Vanilla
Water and ice blended

I see less than 15 carbs. What are you using to calculate?

I'm using a built in scanner that shows the carbs, than the overall calculation. An apt I downloaded for iPhone

I would guess then that it's calculating the cocoa as "hot chocolate mix" which has anywhere between 4 and 26 carbs depending on the type. Plain dry, unsweetened cocoa powder only has about 3.
That lose it app is a nice one though.
