I craved pan cakes today and got creative

I thought I would try and make a diabetic friendly pancake and also diet friendly for myself .Checking Bisquick post on line are all over the place.
My recipe below , but first ate 3 good pan cakes, sugar free syrup , 3 strips of turkey bacon and a small can of low salt v-8 juice . Nice and healthy too and not fattening.

2 cups of bisquick
!/4 cup of egg whites
1 cup 1% milk
1 lunch pack of apple sauce with splenda
2 tlb. of vanilla
some cinnamon

Sprayed griddle with olive oil spray , 0 cal.
Sprayed hot pancakes with can't believe it is butter . 0 calories

My best accurate ingredients caloric count came up with 73 calories per pan cake of original Bisquick .

Total breakfast was 367 calories .

I can live with that once in a while for personal pleasure.

Try "Fiber One" pancake mix.. Yum.. Yum and does not have all the crap like Biscuick and has lots if fiber… I don't use any kind of syrup… I put fresh peanut butter on mine… Oh and sometimes I put some chopped walnuts for more protein if I don't use peanut butter

I need to do some checking in the store to lean more what is in there ? I have a cup board full of food ($) from pre diabetic diagnoses so trying to see over time if I can use a some of it up safely .

Most days I am very good, today met friends for lunch and blew it but BS was only 111 after 2 hours so maybe I didn't ruin everything ?

That sounds good. I made pancakes the other night for dinner. I used regular pancake mix and regular syrup. It was the first time I had pancakes in 6 months so it was my special treat.

They have a low carb and low sugar Bisquick. I bought it the other day but haven't tried it yet. I also found a mix that is made with whole wheat, oatmeal, and apple cinnamon. It is by Private Select. Not sure what area you are in but it a Fry's store brand. My kids and I enjoyed that one this morning.

I bought it, tried it and tossed it in the can. However it was a store brand product. It was not as good as the bisquick product and I found it to be flavorless and didn't rise as well. I also tried the heart smart Bisquick and it didn't rise as well. I rarely buy store brand products. Some of them are just plain bad.

I will have to check it out .
I used an older box to finish it off so tried to make it work and it did OK I think with my changes and stuff. I now have frozen pancakes for a few more mornings ready to micro whenever but will meantime see what is new on the shelves for whenever.
