Wow, today for the first time in the three years of dealing with Diabetes I ate noodles that did not spike my BG!!!!
Finally tried one of the many alternative flour noodles that I had found at one of the two big Asian food markets. Yes, I dragged Hubby through 2 one snowy day last Winter. He stood somewhat patiently by as I read every label on endless bags of noodles. Today I decided I needed to try some noodles as I stared at his wheat flour ramen noodles. They no longer tempt me, since the last time I snitched a few they tasted about as good as homemade glue. By the way, I have not eaten glue since I was a not too bright child and tried it, somehow the taste left a lasting impression.
They were very simple to make: Boil water. Add noodles. Remove from heat. Let sit for 10 minutes. Success. Hubby boiled the water, he still doesn't trust me with the stove. I added a little pat of butter, garlic powder, onion powder, and parmesan cheese. Tasted really, really good. They were long and slurped wonderfully. Enjoyed them with some green chili pork Hubby had pressure cooked. My BG was 110 at the start and during 3 hours of every 15 minutes BG tests slowly rose to 132 then dropped to 95.
I am so looking forward to making one of my very favorite meals of times past - meatballs and parmesan noodles soon. Made about a 1 cup serving of noodles which was about 1/2 of their suggested serving. It was about 25 Carbs.
