Fiber is good for lots of reasons. Two you may like are: 1. They cause you to feel fuller faster meaning you'll eat less (if that's a concern); and, 2. when a food item has MORE than 5 grams of fiber, you subtract the whole amount from the total number of carbs (more fiber = less carbs) :D

Basically, there are two categories of carbs, and they are either simple carbs or complex carbs. Simple carbs break down into sugar and enter your bloodstream very rapidly once they are ingested. Complex carbs breakdown more slowly, and enter the bloodstream as sugar, much less rapidly then simple carbs. Generally speaking, and in short, simple carbs are mostly found in processed foods such as candy, soda, cakes, breads, pasta, flour, and most so called junkfoods as a small example. Sugarfree foods can be high in simple carbs.also. Simple carbs will commonly cause a spike or rapid increase in bloodsugar!
Complex carbs are generally found in natural foods, usually those that grow from the ground. These include most vegetables that are not starchy like in potatoes, and many types of fruit, especially berries. Also beans can be a healthy source. Meats, pork, and poultry have zero carbs. Complex carbs are sometimes referred to as healthy carbs because they take longer to breakdown into bloodsugar when ingested into your body. This slower breakdown makes it possible to avoid extreme bloodsugar spikes. It's still important to limit the amount ingested since you can still overload your system and cause high bloodsugar levels.
This is all very basic, but it's a start! One additional item is a glycemic index chart that I've included in the following link. The higher a foods glycemic number is, the faster its carb content will breadown into sugar and enter your bloodstream.
