I'm having a hard time finding low carb snacks. I usually eat on the run and sometimes dont take the time to check my sugar. Is there any snacks you all would recommend to a busy mom, or I'm I just dreaming in thinking I can eat without testing..?

The new Special K cereal bars are good and with chocolate as one of the flavors, they hit the sweet tooth too. They have 17g of carbs per bar.

I like a cheese stick with some apple slices. That usually works best for me :)

How much insulin do you take for a couple cheese sticks? If your on target at the time?

Cheese usually is very low carb. Any insulin (fast-acting) dosage should be based on your specific carb to insulin ratio based on the number of carbs you're ingesting.

I only take long acting insulin - 15 units of Lantus each morning. So i'm not sure how you would calculate for a snack.

I like celery with peanut butter or hummus. Or even some tuna salad. Some people like it with cheese spread, but that's not my thing.

I love celery with peanut butter but have never tried hummus, not even sure I know what that is. I also love the pistachios and almonds.

Well, it is a little more than that. It's blended chick peas with olive oil, lemon juice, garlic and sometimes fresh herbs of your choice. I really like it home made and it takes no time at all to do it. You can also make hummus with other beans.

Low carb snacks on my list are pistachios or almonds. I also keep celery handy. If you like them and can deal with the calories, pork rinds are a great low carb snack. I like the seasoned ones.

My dietitian really stressed that also to me on Tuesday afternoon when I meet up with her !
I was also counting it as a carb !

I grab an apple, eat one half of it with a little pnt butter and then the other half the next day.

always eat protein with a piece of fruit, like Gwen said, cheese is a good one, natural peanut butter that is low fat is another good choice. I don't see anything wrong with the new Fiber One protein bars
