Favorite green veggies?
With St. Patrick's Day coming up in a few days I have been thinking of all things green and trying to come up with good St. Patrick's Day themed dinner ideas using lots of vegetables.
What are your favorite green vegetables and how do you like to prepare them?

Love roasted asparagus, and salads with LOTS of baby spinach
Here's another GREEN that I forgot in my previous posting, beet greens, the tops of beets. To me, they are fine in a salad, but many just boil & eat them alone. NO, you don't have to eat them alone, by yourself, like when I eat sardines (the fishy smell grosses my wife out). Sometimes I don't like the English language - you can understand it so many ways.
Thanks to all who have contributed to this discussion. I'm not much of a chef and need all the help I can get.

considered fruit? again yuck-o My aunt use to force me to eat it as a kid
my kids love their veggies, including okra! mind you i shop at the asian market so they have tried all kids of weird veggies, but would never force them to eat anything they dont like. all i ask is for them to try it and they love it 100 % of the time. my biggest challenge was brussel sprout. since i didnt like it before, i was thinking the kids wont like it either, but i was so surprised that they liked it. and i liked it as well for my second try! LOL!

Most green veggies = yuck !!! I'll eat most of them raw; but definitely not cooked.

Try crumbling up a little cooked bacon when you cook them. EVERYTHING tastes better with bacon!!!

I grew up eating seafood. Our family didn't use butter for shrimp or lobster. I'm Filipino, i can eat it cooked with or without sauce..I don't like that cocktail sauce…eww

Roasted asparagus is my fav. Drizzle with olive oil and put in the oven at 400 for 10 minutes.
Okay, where do you live? What do I need to bring? Asparagus season is coming up. Of course, it makes my pee stink for 2 days!
Raw asparagus is delicious in salads.

I love steamed broccoli. I like green beans straight out of the garden. I grow some of the most spicy flavorful lettuces. Even brusselsprouts have a niche in my heart when roasted in the oven with some olive oil and seasonings. I love green veggies, nearly all of them.
Today of course traditionally belongs to the green cabbage and I like that one, too. Steamed until tender with some cream, butter salt and pepper.
Green beans, boil until non squeaky when bitten, drain water, add half cup chicken stock cover for 5 mins, add quarter cup Parmesan cheese, stir in and serve
AND for salad dressing (for raw salads), I don't use the milky colored stuff, like Ranch, that has lots of soybean oil in it, which is not healthy. I prefer a vinegar base "whatever." Can someone recommend a recipe or a brand name healthy "dressing" (or whatever it's called)?
Sorry, I don't get out much. (I grew up in a family owned grocery store and as a result, I avoid going to them, just like I avoid working on a hot metal roof when it's 100+ degrees = a bun warmer for sure.) LOL

Linda, I went to the "Recipes" section on this site and have decided on apple cider vinegar for my salads. Lots of info there. Gabby has a recipe to make it from scratch but I'll just buy some. OR I just might raid Gabby's house some dark night and … probably get shot. :o(

spinach and lettuce,no salt or anything!Just take as salad and enjoy!
I love spinach, sauteed with a little olive oil, fresh garlic, salt and pepper. and asparagus! also sauteed with olive oil, s&p, and sprinkled with some lemon juice at the end!
I do the same thing with fresh spinach, or turnip greens, so good.
My favorite green? Paper MONEY! LOL (It's a bit chewy though)
Seriously, GREEN romaine lettuce. I make huge salads using the romaine as the base, then GREEN bell peppers, onions with GREEN tops, GREEN cilantro, GREEN celery, GREEN kale, raw GREEN beans & many other veggies like tomatoes, carrots, & whatever else I find lurking in the dark corners of my frig. - just so it's not moving. :o) Top it off with a cup of GREEN tea!

Yeah, New Braunfels!!!! My mom's family all from there. That's where we "summered" each year. We like our asparagus lightly coated with EVOO (extra virgin olive oil) and a lite sprinkling of kosher salt roasted in 400degree oven for 20 min.

You need to "summer" here again. We live 3 blocks from Schlitterbahn Water Park & 6 blocks from Hinmann Island Park where the beautiful spring fed Comal River flows. That's where I do my early morning walk before the sun comes up. Usually there are no people out that early so I talk to the animals - geese, ducks, deer & a skunk or two. The geese actually talk back to me using odd little geese words. LOL Maybe they're just cussin' me out? Ya think? :o)

I love that too! liike to also roast fresh green beans with other veggies in the oven, after tossing them in a healthier oil and some cracked black pepper, when they come out, put some Mrs. Dash on them
