I don't understand what you mean. There are some good reasons for slowing down eating, some psychological and some physical but they all help control blood sugar and weight gain.

Basically, two reasons. Your body is not completely in sync so it takes a little while for you to realize you're full which means if you eat quickly, you may be full but not realize it and eat more. If you take your time eating you should feel full closer to the time you actually are. Then the slower you eat the slower carb will be digested which means the slower your blood sugar will go up. Imagine a bonfire. If you throw a gallon of gas on it you get a very quick, very large increase in fire. If you slowly trickle the gas into it you get a much smaller and even increase in fire. Same sort of principal.

Me again, With gastroparesis food sits for 18 hrs in my stomach. I think that is why my blood sugars are high. What do you think?
