I have caregivers who come in to help me with ADL's almost every day of the week due to my health conditions. That's another discussion by itself. Anyway, one of my past caregivers introduced me to "slaw". Not coleslaw but slaw made out of broccalie not cabbage. She cooked it slowly and for a short amout of time so it was still crunchy. She cooked it in the olive oil I use for all cooking requiring some kind of oil to cook in. It is WONDERFUL !!! She either got it from Safeway, Trader Joes, or Costco, I am not sure where. You can always add other fresh or frozen veggies in it for a variety and color. If you have not already tried it, I highly recommend you do. I am one who normally does not dive into veggies. She would cook enough for me to have seconds if I wanted it and some left-overs for the fridge so I could heat it up in the microwave. I almost always asked for seconds. I also got a bag of slivered almonds to add to the dish. It is great and a terrific way to add some protein to the dish.
