Creativity with Food Leftovers

How creative are you with your leftover food from the day before?

Why throw it away, or eat it as it is, when you can "Jazz" it up and create a masterpiece of a meal from those very same leftovers!

What are some of your food favorites, or specialties from your leftovers?

when I roast mixed veggies, which I frequently do I will take the leftover onions and red and green bell peppers and put in omelettes.

I like to make spaghetti sauce with leftover meatloaf, i already have my onions, green peppers and tomato sauce in it ,of course, I add some low sugar bottled sauce to it but it tastes great.

Made chicken and mushroom crepes from leftover grilled chicken i froze from last weekend. The rest became chicken salad.
Seemingly small amounts of onion, pepper, celery etc get combined with black beans with a dressing of lime juice and light olive oil for a great salad.
We only cook for two, so we plan very carefully how we're going to use ingredients with little to no waste.
