Alright so here we go with my new diabetic cooking adventure. I decided to start out with something pretty easy, hence the word "easy" in the title of the recipe. :)

Tonight I tried these easy sauteed fish fillets. And the title does explain it pretty well, this recipe was very easy and fast to prepare, which is essential for our family.

I used tilapia fillets for this recipe and they turned out surprisingly delicious. I was skeptical that they would have enough flavor, but the flour mixture turned out to be just right. I did add a little garlic salt and cayenne pepper just to spice it up a bit.

What I loved about this recipe is that was so low in carbs. And fish is a great heart healthy choice. I just finished eating it and I feel good, which is rare after I eat a meal. I will have to wait and see what my blood sugar does over the next few hours.

I would definately recommend this recipe for anyone that is looking to prepare an easy tasty meal that won't affect your blood sugar much.
