There have many so many discussions lately about Carbs (carbohydrates) and how many should one have. Whether it be per meal or per day.

I thought it would be a good idea, to put forth a meal showing both how many carbs and calories, one person could have in a meal. I thought that Most people sit down to dinner together, that this would be the most appropriate.

Of course everyone is different in what their CDE or Dietary has told them they could consume per meal. I was told by my CDE that I could have between 2 to 3 carb servings per meal (which is 30-45 carbs).

I'm posting one of my typical meals, with both the carbs and calories for a dinner meal :

Herb Crusted Chicken 203 Calories 6g Carbohydrates
Italian Green Beans 36 Calories 3g Carbohydrates
Easy Scalloped Potatoes 94 Calories 17g Carbohydrates

Dessert : Cinnamon Sugar Apple Rings 68 Calories 10g Carbohydrates

My total meal is 401 Calories and only 36 Carbohydrates

So, Now What are you having for dinner?

Let us show the new people who were just diagnosed on how to put a meal together.

Re1ndeer, I am on a 1200 calorie a day diet. I lowered it to 1000 calories a day. I had done this years ago and lost weight. I pretty much rarely exceed the 1000 calories so I don't worry too much about my caloric intake because I can basically know how much to eat of something. Since Christmas I have lost another 30 lbs.

It's almost like your not eating very much. Congratulations on the weight loss. I'm on a 1600 calorie diet (by doctor), and I find it very hard to stick to it.

Thanks for responding.

I rubbed fresh cracked black pepper to a 4 inch steak, placed in ziplock baggie and poured 3/4 cup Woodford Reserve Bourbon in the bag and marinaded it for 28 hrs. Last night I cleaned corn left it in the husk and placed on grill. When corn was nearly done I added the steak. With that I had steamed spinach with a pat of I Can't Believe It's Not Butter with a large glass of diet Iced Tea sweetened with lemon and Equal. The steak was large enough for two. My sister and I had this for dinner.

re1ndeer 2012-06-29 18:36:49 -0500 Report

Pork chops are good, if remove most of the fat from them, and they are low in carbs too. Now the rest of your meal will be interesting to see what you make.

Thanks for responding.

We went out to eat. I had Copper River Salmon, asparagus, and mixed vegetables which were broccoli, carrots, yellow squash and red bell pepper. Water to drink and no bread. Maybe I should eat a whole wheat tortilla now to get some whole grain carbs.

re1ndeer 2012-06-27 22:10:16 -0500 Report

Thanks for sharing your meal. It's great that you picked healthy meals. Could you guess how many carbs and calories were in your meal?

We are trying to show newly diagnosed diabetics how to choose healthy meals, by calories and carbs.

CaliKo 2012-06-28 09:29:30 -0500 Report

Since I didn't use the sauce (on the side) for the salmon, and it was what they called a "petite" serving - I'm guessing 5 oz. my dinner weighed in at 435 calories, 22 fat grams (but it's the good fats!) and 18.5 g carbs. When I added a whole wheat tortilla with nothing on it, that added 80 calories, 2 g fat, and 12 g carbs. I didn't eat anything else during the evening, so the tortilla was really my bedtime snack.

Thank you for clarifying your meal, since you did not make it. It's good that you guess'd at what the carb, and calorie totals (they sound about right). It actually sounded like a delicious meal. It is hard to go to a restaurant and know what exactly they are serving you. You don't know about the added fats, salt etc. that could be added.
Thanks again for responding.

Hi again, I only guessed at the portion size, I looked up the calorie and carb count to answer your question. I've been doing this so long now that I have a sense of what I can eat, and try to eat salmon or tuna 3 times a week. I'm not medicated yet, so have a little more leeway than I will later whenever I need to add medication to my regimen. I'm still exercising like a fiend, and my last A1C was 5.8. Hope you are well, reindeer, good discussion.

re1ndeer 2012-06-28 11:21:06 -0500 Report

Thank you. Yes, I'm well. It's great about your A1C. Its also good that you are keeping up with your regiment.

well now that you've made me hungry,I just may have the energy it takes to make a meal. I had a large salad( way too big for me.I got tired of eating it 1/3 of the way through, then i made a scrambled egg with tomatoe and a slice of Jewish rye bread with black tea.. Not as fancy as your yummy meal.

re1ndeer 2012-06-27 22:07:13 -0500 Report

Thanks for sharing, could you please list calories and carb count.

Jan8 2012-06-28 06:36:56 -0500 Report

I use the plate method reindeer.!/2 Vegetables,1/4 protien,1/4 carb. Suppose to have 35-40 carbs per meal. To make up for the carb count i had a nectarine and solid gold pretzels. I estimate the carbs. it drives me crazy trying to keep up on them.

re1ndeer 2012-06-28 08:20:27 -0500 Report

Thanks for clarifying on your meal plan. I know counting carbs are hard to do, but, the newly diagnosed are more than likely told to do so. I just wanted to help them see a normal meal plan they could put together. Thanks again for responding.

Okay I get it and thanks reindeer. From now on I will count carbs. My first New Years resolution !

Collard greens, and 15 bean soup full of nutritious, vitamins and great taste. Low salt, meal. 1/2 cup total is 65 calories, eat all you can. The darker the greens the better!

re1ndeer 2012-06-27 16:14:48 -0500 Report

Is that 15 different beans in that soup? or is that the carb count? It really sounds interesting. Are you interested in sharing your recipe, for the soup?

Thanks for sharing your meal plan.

Nana_anna 2012-06-28 07:09:54 -0500 Report

You can buy packed. Wal Mart has it. You soak the beans as usual, add the packaged sauce mix, or just salt and pepper, and garlic. It has 24g carbs per 1 cup.

Thank you for clarifying your meal plan. I'm so looking forward to try this, sounds delicious. Thank you again for responding.

We're having crock pot beef stew. It's only 271 calories per serving and 36g carbs. I usually only eat 1/4 or 1/2 of a potato. I stick mostly to the carrots and celery and few pieces of meat.

re1ndeer 2012-06-26 18:28:55 -0500 Report

Thanks for sharing your meal plan, it's good to have all of your meal in one pot. It saves a lot of time in the clean up.

Nick1962 2012-06-26 15:20:57 -0500 Report

Tonight, as most weekday nights its:
Large garden salad (2 cups) - 5.5 carbs, 12 calories
Bleu cheese dressing (Marzeti’s) – 4 carbs, 80 calories
Grilled hamburger patty (w/ ketchup and mustard) – 2 carbs (from the ketchup and mustard), 278 calories

Total 11.5 carbs and 370 calories (I’m very strict with my diet usually).

I save my higher carb meals for the weekends when I’m more active, so I’ll try your herb chicken and Italian beans on Saturday, but use some wild rice instead of potatoes (I just don’t have the taste for them anymore).

re1ndeer 2012-06-26 15:31:42 -0500 Report

Thanks Nick1962, what a great light meal. Can I ask, what's in your garden salad is it just greens? I try to limit the amount of red meat I eat, but this sounds really good.

Nick1962 2012-06-26 15:59:08 -0500 Report

We only "cook" on weekends (conflicting schedules) so I prep a bunch of containers with "salad bar" fixins' that I can use during the week. Sliced seeded cukes, shredded carrot, green/red peppers, fresh spinach, celery, cauliflower, you name it. I always try to add a protein like chicken legs too.

re1ndeer 2012-06-26 18:27:44 -0500 Report

Sounds really good, thanks for going into detail. I will post my recipes listed above, later tonite in the recipe section of Diabetic Connect.

Only occasionally I will have a Johnsinville brat (like for the 4th of July).

One link is 260 calories, 21g of total fat, 60mg cholesterol, carbs are only 2g, protein is 14g, sodium is 680mg. (quite alot of salt in one brat)

This is a special treat for the holiday, otherwise, i try and stay away, because I can get more food into my diet, then one link for 260 calories.

Nick1962 2012-06-27 08:38:36 -0500 Report

Yeah, the sodium is up there but I frequently use them as a source or protein. I wish you could measure carbs on a meter like BG, because I'm sure soaking them in beer like we traditionally do raises the carb count.

I follow LCHF way of eating. My dinner last night was as follows:

Bunless grilled chicken sandwich:

Grilled chicken 130 cal, 0 carbs
slice of tomato 3 calories, 2 carbs
slice of onion 4 cal, 1 carb
mayo 1 tbsp 90 cal, 0 carbs
Romaine lettuce 2 cal, 0 carbs

Total for meal: 329 calories, 3g carbs

This way of eating works for me. YMMV
