For those new to grilling if you want onions on your burger here is a tip for grilling onions. Soak skewers in water for about 2 hours before grilling. Cut a large onion into slices thick enough for the skewer. I season my onion with salt and pepper, Spray onion with non stick cooking spray, insert skewers (I use two and put them in vertical and horizontal) and put them on the grill and cook until done. Taste great.

Saw that the other day. I make Woodford Reserve whiskey burgers. I also add the whiskey to home made bbq sauce and add it to chicken or meatballs. I use the unseasoned frozen meatballs. I take a beef roast stick peppercorns all over it, the add a quarter cup Woodford Reserve to the bad and marinade it over night turning often. Then slow roast it in the oven or grill it. The alcohol cooks off and leaves an amazing flavor. I take the marinade and boil it and make gravy. Great on potatoes or over the meat.

Yes James. That one about boiling the marinade if it's to be re-used was a new one on me. Never would have thought of that.

So yummy, just don't put them too close to the flame, or if have to then turn them often. Can also put veggies in foil and place on the grill. Now I think I want kabobs for dinner tomorrow night.

I read these off to my hubby and he said there's no way he's missing grilling season this year. Unfortunately our grill is on the fritz but a simple little hibachi will do it. I'm all over that jerk chicken and salmon! The kabobs and the terryaki beef sounds delish too!

Nick have you ever had curry chicken salad? I tried it and it was delicious. I have also had bbq chicken salad which is great on a hot day. You get the bbq flavor from the sauce in the chicken salad.

Yup, but I prefer it with the hot curry, not the sweet. We have a little Thai place that does a cold curry chicken salad with shredded lettuce and cold Udon noodles for lunch. Odd combo but tasty (when I can have it).

Well,the curried pork kebabs went well with some minor adjustements. To the seasonings I added 1/4 tsp cayenne pepper and 1/2 tsp smoked spanish paprika (suprised?). Instead of cubes, I cut the pork in strips about 1/2 inch thick and bunched it up like ribbons on the skewers (short 6" bamboo ones) so it would be more like a "satay" - they cooked more evenly and had more nooks and crannies for the marinade to sit in. Gotta grill them on low heat or the sugars in the orange juice tend to carmelize and burn.
Served with a dipping sauce of tzatziki - mine is just grated cuke and plain greek yougurt with a pinch of garlic salt. Threw some yellow zucchini squash strips on the grill as well and served the whole mess with brown rice (just a 1/4 cup for me though).
Tomorrow night - blackened kitty fish and cuke salad!

That's what my little neighbor calls the small catfish fingers, "kitty fish". A little dill, some vinegar, some cukes - not alltogether "paleo", but really simple and really low carb and sugar, and about as much protein and healthy fats you'll get from any meal (well aside from your local Poke).

That’s if they let me back in the store to get them. BIG mixup last week – I was getting ready to pay for my groceries and the lady said “strip down facing me”. Turns out she meant my credit card.
