The spring issue of Diabetic Living features an article on chef, Sam Talbot. (I tried linking the on-line article but since I don't subscribe, I couldn't access it—a friend gave me her issue of the magazine). Talbot competed on Bravo Channel's Top Chef and placed 3rd. He's been a Type 1 since age 12. His recipes featured in the article are generally low carb and look scrumptious: MahiMahi with Remoulade (6 grams carb) served with asparagus; Spring Salad with Apricots, Almonds, and Cilantro (18 grams of carb); Grilled Skirt Steak with onion ponzu (14 grams of carb) and Striped Bass with Tomato Relish (9 grams carb). If you google his name you'll come up with more info and sites for him. He's got a cookbook out called "The Sweet Life". He's quoted "Positive thinking can help people with diabetes get over any hurdle." I just love this guy and will have to check out his book!
