I make low carb cakes, pancakes and waffles using soy flour and sugar substitutes. Some people have problems with soy but it works great for me. If you google almond flour recipes or cakes or cookies you will find lots of recipes using almond meal or flour. I have modified lots of recipes using soy flour cup for cup. Splenda I found I use about ¼ less than regular sugar and so far it works pretty well. I have made carrot, chocolate, pumpkin and my latest pound cake. I think they all tasted good and none spike my blood sugar as long as I eat them after 12 pm. Can’t eat much in the morning except a protein shake, hard boiled egg or sunflower seeds or peanuts. If eating the seeds or peanuts I only eat one serving. So far I eat my cakes without any frosting. I have several recipes for frosting and plan on modifying them soon, so I can have frosting on my cakes without spiking my blood sugar.

Good luck

Have you seen the recipe section link? You'll find it on the left side of the screen about the mid point in the list of links. When you get to the recipe main page you can then search the recipes with the search function.
