What is healthy at a Mexican eatery?

I really enjoy Mexican food, it's one of my favorites, and since being diagnosed in December I have avoided my favorite places. I know that chips, beans, and rice are not the best things to eat; but would like to know what (if any) is ok to eat. I really enjoy the fajitas, ok I know the tostada isn't good, but can I just eat the sizzleing meat and veggies and leave the rest alone? I REALLY want to have a Mexican dinner, and my hubby has promised to take me so any help/suggestions would be greatly appreciated.

Mmmm…I love Mexican food! I would order the fajitas minus the tortillas except for 1. I would then mix up the meat with guacamole, cheese, salsa or pico de gallo and lots of shredded lettuce. This would be way more mixture than would fit iinto the 1 lonely tortilla, but then I would eat the rest sort of like a salad. The thing is would really miss is the spanish rice and refried beans, oh yeah and a margharita! Man, my mouth is watering just thinking about it!

Thanks for all the help, now I can eat and not be too worried. I will miss the beans and rice, but will skip these to have a few chips, salsa, and the meat and veggies from the fajita. Hope everyone has a great day!

I live where all there are is Spanish food, and was raised on Spanish foods. At first when diagnosed in August I thought no more Spanish food for me. I have found ways to eat and cook at home and in restaurants. At home I use the low carb flour tortillas and cook them in olive oil, (the one for cooking), I then measure my pinto beans, add tons of garnish, limit the cheese, and waalaa!!!!! I also use wheat flour for chili sauce. I also have baked a low carb tortilla with a little oil brushed on and sprinkled with sea salt for tortilla chips for salsa. At the restaurants I usually order chicken enchiladas, with beans and extra garnish. I will only eat 1 corn tortilla. Thus works for me!

You sure can just eat the meat and veggies and leave the chips, rice, and flour tortillas alone. I occasionally allow myself 1 corn tortilla with my fajitas, but I've got my BGs under control. If yours are, you might experiment with that too.

Thank you, that's what I was hoping. I enjoy the chips and salsa, but know they are not good for me. My BG is somewhat under control, it spikes sometimes when I forget and eat something (or too much of) I shouldn't. I knew I could count on you. Ya-hoo, I get my favorite food again!

I had some chips and salsa this last trip. That one has been a long time coming though … haven't done chips in quite a while.

I can relate. I haven't had Mexican food since being diagnosed and I miss it. Although I did have Taco Bell the other day (I don't count this as Mexican) and was very careful, didn't affect my BG anymore than a regular meal.
