Stir-Fry Recipes (10) and 50% are under 20 carbs/serving!!!!

As I read through these I was impressed. There are 5 that are 20 grams or less of carbohydrates per serving. Definitely ones that I will be trying.

Here's the list (all carbs and proteins are measured in grams):
1. Orange Scented Beef Stir-Fry 23 carbs, 20 protein
2. Pad Thai (I'd skip this one.) 51 carbs, 23 protein
3. Asian Green Bean S-F 10 carbs, 3 protein
(I will add cubed chicken to this and increase the protein.)
4. Salt and Pepper Shrimp 20 carbs, 34 protein
(Be careful what you serve this on cause rice has lots of carbs!)
5. Wok-Seared Chicken & Veggies 13 carbs, 25 protein
6. Spaghetti Squash and Pork 22 carbs, 27 protein
7. Garden Fresh S-F w/Seiten 33 carbs, 20 protein
(Seiten is a wheat noodle.)
8. Beef & Cabbage S-F 23 carbs, 21 protein
9. Thai Chicken & Mango 0 carbs, 21 protein
(Be careful what you serve it on because rice or noodles have oodles of carbs.)
10. Cashew-Snow Pea S-F 8 carbs. 3 protein
( I will add cubed chicken to this when I cook it and increase the protein.)

Personally, I will be trying #s 3, 4, 5, 9, and 10.

This sounds sooo good!!! Want them all! My hubby likes to stir fry and I swear that is all we ate for a year about 25 yrs ago. I got him a new wok, but didn't expect it to become the go to for most meals:D We just went shopping today and it is still raining heavily and cold, so maybe I'll suggest it for tomorrow.

Funny you should say that: my wok is my most used pan also. It's not always for stir-fries, though I make many of them, but just convenient size, shape, and depth for really easy cooking.

I was in Safeway last night and found the meat department was having a Thursday night BOGO event. Bought family sized packages of 93% lean ground beef and sirloin and got one of each free. At 50% off, I stocked up. This is the second time I have found this on a Thursday night … and, of course, all gone by Saturday. Will be checking Thursday nights from now on.

Wow, what a deal! We keep our freezer stocked as my husband buys meat in the bulk form and then cuts them into portions himself. Yes, he can take a whole animal and cut into correct cuts and then down into the right portions. I have seen him do this at work and it thoroughly disgusts me:( I have to walk right back out, yuck!!! I have to mention when he cuts a whole chicken I can't stand to hear it, I'm that big of a wuss.

We had stir fry for lunch and I saw that gleem in his eyes again, I think I'm having stir fry often for awhile I'm affraid:D

I think, if I had to kill and clean it, I would probably be a vegetarian. I've gutted chickens, so know the sound you mean, but I'm not sure I could kill one.

There are worse fates in life than too many stir-fries! :)

That is what I said before, that I could easily be a vegetarian if I hadn't married a chef. Oh I agree about worse fates in life, but I can't do too many stir fries any more. I just know he likes making them. I tease him that it is just the flipping the food in the air that he likes to do, he is so good at it.

There have been some good ones in these recent postings. Can always make a copy and save for future use. That's what I frequently do, cause I can't use all of these yet either.

Sound yummy thanks for sharing. I just learned about how the rice and rice noodles can effect my levels, even with exercise. Had Ban and was at 170 2 hours after. A few days later ate sushi and walked for 1/2 hour after; 2 hours later was at 173. Live and learn. Will avoid or greatly moderate.

If you want to use a rice with more hull that will be slower to digest, you may be able to minimize the bump and still eat a little more. I started using wild rice mix, then wild rice, then black rice, now mahogany rice. All have more fiber and so are cooked a little longer, but also have more flavor than the traditional brown rice.

Yes, your sushi days are limited. I look for a place that serves sushi and sashimi when I really want some sushi. The protein of the sashimi (raw ahi, usually) helps offset the rice carbs of a sushi for me.

Another trick is to add some nuts in with the rice. That also helps diminish the BG bump, as does celery, if either could be introduced into your recipe.

These are all great and fairly easy to make. My favorite is the Beef and Cabbage, and I usually add a little chili garlic paste to turn it Szechuan (but usually overdo it too). Unfortunately, of all the things I cook, stir fries are my worst dish. Never can get the pan hot enough or I totally overcook everything. Doing away with the rice or noodles was hard for me, but learned to like it to cut the carbs considerably. Because I am stir fry “challenged” we often order take out of these, which of course always come with rice we won’t eat (or very little), but my neighbor’s dog loves it mixed in with his food so it doesn’t go to waste.

Easy to get carried away with the Szechuan chili garlic paste. I added some to a relatively bland chicken and quinoa dish I fixed last week and burned my mouth. I wanted to save the dish so added some yogurt to cool it down. Discovered milk products don't cool the heat of Szechuan in the same way they cool the more typically Spanish/Mexican spices I grew up with in Southern California.

Value your opinion, so I'll take another look at the Beef and Cabbage especially in light of my having 1 1/2 heads of cabbage in my frig right now.

On another subject, do you have a quick/easy/D friendly recipe for cole slaw? I have mixed green and purple cabbage at the moment and need to use them.

Actually, I like the slaw they have at Zoe's Kitchen. It's very simply shredded cabbage, a very (and i mean very) light vinaigrette of light oil and vinegar with a pinch of salt, and some feta cheese tossed in before serving. I may also toss in some sunflower seeds or bacon bits if I have leftovers, but love the clean taste of the simple cabbage. Really, cabbage and a store bought greek dressing works too.

Thanks, Nick. Sounds good. I've seen so many that are creamy and/or have so much sugar that I was getting a little discouraged. This sounds like it would have a clean taste.

Very clean, and you can go light on the vinegar so it's just a hint. It holds well too!
Ya know, you can sautee that cabbage in a little oil as well. A little salt and fresh pepper and you've got your veggy for a meal.

I saved some of the bacon and will do the spinach in it tonight. Yes, I've cooked cabbage in a stir fry with bacon, salt, and pepper. Very tasty.

Not stretching it at all. That's one of my frequent morning omlettes, with a little feta cheese added in, of course.

And it would be a very good choice. The cole slaw was good! I'm going to use a little more feta next time, but I almost made a meal of it, I was enjoying it so much.

Wow you're up early (or is it late?). Glad the slaw worked out, Zoe's usually adds scallions, but sometimes they're a bit sharp. That slaw is a great base to clean out the frig. Weekends I chop veggies for a "salad bar" to feed me the coming week. Whatever is left on saturday (red pepper, carrot, red onion) gets thrown in the slaw.

Zoe's looks like a great place, but it's not in Hawaii.

I do something similar with the food preparation, but my veggies usually end up in an omelette or a soup by weeks end.

It's early: 3P. Going back to bed shortly. Awakened with a painful right leg … need to call my chiropractor tomorrow. Need to get over this.

It's recurrant. I broke my back (L5) in an auto accident in 1994. Thankfully, I was not paralized from the waist down as my doc said I could easily have been if the bone had broken any differently. Instead, I just have lower back pain that comes and goes. This time it feels like it will need some help to get it going!

Ooooh sorry to hear that! that's one area that nevers stays aligned for me - T12 on down (result of accident also). When i wash my car I can get the whole line of them to pop each time I bend down. My legs are sore the next morning. I feel your pain (but got to bed now, seriously).

I did and slept soundly until 7a. Also got to see the chiropractor today. Feeling better though still hurting. Will see him again on Tuesday. Thankfully, it no longer feels like my right leg was dipped in fire … just hurts, not burns.

Good to hear you got some relief. I know sometimes I have to make 2 trips, but some days she goes all medievil on me and clears it up. I think it's a game for her - how far can she push before she gets me to moan!
We had something different today - a stir fry wrap. Tasted like a giant egg roll and was delicious!
