Mexican Food for Cinco de Mayo

Cinco de Mayo is coming soon and here are some recipe suggestions for those of us who enjoy Mexican foods. In the last couple of days, we have discussed cilantro and jalapenos on one of our discussions. Here are some new thoughts on this link, including a really unexpected one for avocado ice!

These come with the usual caution: some need to be adapted to our specific diabetic dietary needs, but still worth a look.

I am going to make a few of the recipes on this .I always enjoyed Mexican Food .

Me, too. When I thought I might have to give it up, it really made me angry, then sad. For me, that's the trigger to do something about it.

Last Monday, I had steak fajitas — full plate — so there were lots of veggies (green and red bell peppers, onions, etc.). I ate it with beans, but skipped the rice and the flour tortillas. Had some corn chips and hot salsa (capsacin also helps lower BGs) and iced tea with lots of lemon (also helps). Then I took Wayne for a one mile wheelchair ride with me pushing. My BGs were 120 at 2 hours. It worked!!

awesome that shows others it can be done ! I would definetly try the Dinner with omitting the tortillas and the rice . and even do a small walk after it also .

I would make all of these recipes except the avocado ice cream. I just don't use sugar substitutes, so I'd probably skip this one.

Thoughts on adapting the other recipes:
Reduce the beans and corn in proportion to other ingredients.
Omit the rice — white, brown, or other.
Use corn tortillas in moderation in place of flour ones; omit the flour tortillas.
Increase the lime, vinegar, and cumin in the recipes.

Personally, being gluten intolerant, I'd substitute quinoa flakes for the whole wheat bread crumbs that would give me a belly ache.

The enchiladas, I would adapt to tortillaless casserole with 1 optional corn tortilla on the side or I would significantly limit how much I ate.

The margarita, I'd blend with berries, not juice, and would serve it with a salad and carnitas (mexican flavored steak) so I had lots of protein and fiber with my margarita.
