Asparagus -- source of vitamins, minerals, and fiber

Just a wealth of information about how to use asparagus in different ways. My favorites are fresh spears cooked in EVOO (extra virgin olive oil) and asparagus in my quiche. Asparagus soup is a favorite childhood memory thanks to my innovative mother.

Never was a fan of Asparagus up untill about 7 years ago now i enjoy it. I love the Princes brand from Costco it's pickled but i enjoy it cooked or made other ways also.
Besides veggies are good for ya and even… Diabetics…lol

Here are some ideas for adaptations for those of you who might like to make any of these a little more D friendly and not be sure how to do it.

1. Asparagus Pasta —55 carbs — my candidate for the recipe to skip, but you
can reduce carbs by: using coconut or almond flour in place of wheat; use almond or coconut milk in place of whole milk; use Dreamfields or Rice/Quinoa pasta to reduce the pasta carbs. Whatever, eat smaller portions and have a salad with vinegarette dressing and a small piece of protein with it.

2. Asparagus Radish Salad — 7 carbs - no changes.

3. Bacon, Egg, Asparagus Pizza — 35 carbs; reduce carbs be using a light gluten free phyllo crust and add some chia seeds to the topping.

4. Asparagus Soup — 19 carbs which can be reduced by increasing the asparagus and reducing or eliminating the red potatoes.

5. Asparagus with Curry Butter — 6 carbs — sounds yummy as is.

6. Orange Roasted Tofu and Aparagus — 10 carbs — I would substitute cubed chicken for tofu, simply because I don't like tofu.

7. Asparagus in Bernaise Sauce — 10 carbs. I would substitute almond or coconut flour for wheat and possibly skip the mayo and increase the yogurt. I plan to use this Bernaise Sauce recipe with an eggplant dish (Mousaka) also.

8. Roasted Asparagus — 12 carbs — looks good as is.

9. Asparagus Salad — 9 carbs — looks fine as is.

10.Lemon Asparagus — 9 carbs— also looking good.

I have been eating asparagus more recently, myself, but have been eating it sauteed!

Needless to say that these recipes are intended for a non PWD audience so some of these recipes may need to be tweaked so a PWD may more easily eat them without fear.

Me, too … sauted in EVOO. That's why I was interested in some other options while there is lots of asparagus on the market.

Hopefully each of us looks at recipes (diabetic or therewise) through the critical lens of our own body's response to the particular foods in question.
