I just wanted to say Lá Fhéile Pádraig Sona Daoibh (Happy St. Patrick's Day) to all of our Irish family members! Sláinte is táinte (Health & Wealth) to you all!

"May your thoughts be as glad as the shamrocks,
May your heart be as light as a song,
May each day bring you bright, happy hours,
That stay with you all the year long.

May good luck be your friend
In whatever you do.
And may trouble be always
A stranger to you.

Lucky stars above you,
Sunshine on your way,
Many friends to love you,
Joy in work and play
Laughter to outweigh each care,
In your heart a song
And gladness waiting everywhere
All your whole life long!"

Sounds wonderful. My aunt sent me her recipe years ago but I've yet to make it. I love eating it though.

I' got the cabbage in the form of coleslaw, but I gotta get a crockpot. I find the corned beef to be too salty and fatty for my tastes.

James try adding a little wine or beer along with baby carrots, this helps to alleviate the salty taste. I also add red baby potatoes, this is the first time where I have to be careful with this dish, no potatoes for me, and will limit carrots. The alcohol is only 1/2 cup for the dish so it shouldnt affect me, I hope!

thanks for the recipe! Now that means I gotta go out and get me a crockpot! Left the one I had in CA when I moved back to NV.
