Does anyone know if all fruits can be frozen or not? I've only frozen berries, mangoes, pineapples and grapes myself but if I can do others (or them all) that would be terrific.

I've frozen most and use them frozen in smoothies or cooked in things like pie or cobbler. Not so much the latter these days because I'm still figuring out the gluten free part of baking. Some fruit discolors when frozen. If you are planning to use it in a way that would cause a problem, then usually a little lemon juice before freezing will stop the discoloration.

Most fruits turn to mush when they thaw completely, so you gotta eat them while still partially frozen, but as far as I know you can freeze most if not all of them. I have seen sliced peaches frozen in the store.
