Make From Scratch Pudding Recipe?

I've been craving this for weeks. Does anybody have a vanilla or chocolate (made with cocoa) recipe that is gluten free that gives the carb count? As soon as my washing is done so I have the kitchen sink and kitchen back I'm ready to make some. I've located several recipes that don't contain flour but not a single one gives a carb count.

You can substitute cocoa for the chocolate: for each tablespoon of chocolate substitute 4 tablespoons cocoa and 1/2 tablespoon fat.

I looked at several recioes and just as you say no information was given about carbohydrates, etc. even on the Celiac.com site.

3 cups of cornstarch is a lot of carbohydrates.

This recipe makes 13 cups of mix. you only use 2/3 cup per each. Yes, this recipe has 20 carbs per serving. (but it is gluten free)

I have empathy for those who suffer with gluten intolerance. My husband's first wife had celiac sprue and her life was hell on earth. Oftentimes he suffered as well because he was her only caregiver. At the end of her life she weighed 125 lbs. and was 5' 11" tall. I guess the combination of diabetes and gluten intolerance must be a dreadful situation to cope with.
