Cactus Salad

Some of us have recently been discussing Kat's and Gabby's interest in Nopal cactus from the SW. Saw this recipe this morning on an interesting native american site. Printed off a few I am going to adapt for D use.

Now that I finally got some cactus, I am going to try this salad for lunch this weekend. I tasted the cactus out of the jar and it is brined, a little soggy, but I can mix it with stuff. I am eager to try this out, thanks.
Did you ever adapt it?

No, didn't do anything more with it. It didn't seem like anyone was interested. Let me know how it tastes.

It is kind of like dill pickles but slimy. I found a nice way to eat it in a wrap with ham and sliced tomatoes. Rolled all up, it kind of disappears into the mix. Now I need to see if it does anything for me. But you can eat 1/2 cup of it for only 25 calories and 3g of carb. Not bad.
Now that I found the store that sells them fresh as well as in the jar, I can once again put on my experimental hat. LOL
