One of the hardest things for me to give up was bread, but I found a great substitute.
Take a slice of american cheese (so far Kraft singles have worked the best) Put it on a piece of parchment paper on a microwave safe dish. Nuke it on high for one minute. It will get bubbly and kind of puffy looking. Let it cool and firm up for a couple of of minutes. Enjoy.
I use it as a toast substitute and also for making sandwiches. Low carb and tasty.
