Pizza, one of the big loves of my life.....before diabetes

It has been about a month since my diagnosis. I have been taking metformin, counting carbs, and working out. I have been eating a very healthy diet and trying to only eat "good carbs" whenever possible. However, I have become obsessed with pizza, and almost want to cry when I see it on TV because I can't handle it. I can't eat just one piece, and I'm really afraid of going crazy and doing what I used to do before diabetes. After an entire month like this, I finally made a small individual, thin-crust pizza. The crust had 40 grams of carbs and I only put a tiny amount of sauce and cheese. This does fit my eating plan, but I'm feeling guilty. I'm waiting to see how it has affected my blood sugar. Do you struggle with this too? Is there a food that you feel like you can't handle but that you miss terribly?

I make my own pizza from scratch. I use whole wheat flower for the crust, low fat mozzorella, plenty of sauce, garlic and onion on top with a bit of EVOO to juice it up. Tastes fantastic, but I can only have a teenie weenie slice. )-; Then my wife eats the rest!!!

If i have pizza I take 1 slice and make a big salad with it ( 1/2 of a small plate).Sometimes I end up piling the salad on top of the pizza. I will not give up pizza and it hasn't hurt at all.

So Leila, how did it go? Were your #'s ok? I hope so, would hate for you not to be able to enjoy now and again.

They did spike a little bit. Since then, I found a lighter and thinner crust that was tolerated better. I have just doubled my medication, the 500 mg of metformin wasn't bringing my numbers down enough after 5 weeks of carb counting and working out. Hopefully, I will have a better picture of how things are going to work with the new dose.

My doc needed to ad glipizide to my metformin and my numbers went right down. Ask your doc. Hey, don't feel guilty. 40 grams of carbs is great, tomote sause and cheese are okay as well. I think if we like something (pizza ,cupcakes, pie for me) we think it is going to be bad for usand do us in. I think the thing to remember is that yes, if we pig out at every meal we are gong to go down in flames. Healthy choices made with consisitency and moderation in all things will get us to our goals.

There is a recipe here on DC for a "zucchini pizza crust" which is way lower in carb than the regular bread-type of crust (which I loved!). I've tried it and topped it with sauce and my favorite topping and really enjoyed it. It is a bit labor-intensive but I felt it was worth the effort to have a lower-carb pizza!

I miss pizza too I eat a big salad and load it with sauce veggies and cheese on whole wheat thin crust !!! It's pretty good and I drink a couple of beers that always lowers my BS … lucky me !!
Good luck

I miss a big calorie and carbohydrate ladened dish of macaroni and cheese.

I also miss many Mexican and Spanish dishes which feature rice, like Paella, or a big bowl of refried beans covered with cheese.

I can eat less of most these, add a little more meat/protein to the dish, and get by, but the one I really miss is the Macaroni and Cheese homemade with lots of Cheddar cheese.

Re pizza: I've recently found a phyllo dough that makes a substitute crust and one made with quinoa that I don't react to so much despite it still having carbs. Might experiment with making a dough with flours made from sources you are less reactive to.

Good ideas, I'm willing to try anything to get my "fix" LOL :)

Just tonight, I read a suggestion that we use Almond flour because it has very few carbs. Makes sense, since almonds are on our "OK that's good" list. Don't recall having seen any though, so may have to look online for almond flour.

You better believe it. I'm about to go have some of my mac and cheese that I make with a quinoa macaroni and a piece of chicken. Oh, I'll toss in some broccoli and asparagus as a fiberous side dishes.

King Soopers in Dever carries it. They are owned by Krogers, so maybe it is available at their stores. The quinoa works for me if I use extra cheese and have a little meat with it.

I hope it does not spike your #'s on ya. We have to be able to enjoy some things!
It was about a month and a half before I would even try pizza! I was jonsing BIG time! We went to Pizza Hut and I ate 4 pcs! They were not really big, but still! And do you know, my #'s only jumped 40 points! I had also had a side salad with ranch dressing! So I hope you are also able to get away with it once and awhile! Good Luck!

Billee1664 2011-12-30 14:32:53 -0600 Report

When you tested was it 2 hours after you ate? If that might be the reason it only went up 40 points. I found that when I eat pizza by BS dosen't spike until 3 or 4 hours after.

LeilaB 2011-11-30 19:15:18 -0600 Report

That is promising…I did have a side of spinach with my pizza :) (I'm a purist, I don't like too many toppings on my pizza, usually I just eat cheese pizza, unless it is spinoccoli from Uno. )

Mickey/CCHT 2011-11-30 19:28:18 -0600 Report

I don't like a bunch of stuff on mine either. I hope you are able to enjoy a favorite food. Please let me know how this turns out for you!
Can I ask, what is spinoccoli? Is it a spinach, broccoli hybrid!! LOL

LeilaB 2011-11-30 19:33:06 -0600 Report

It is heavenly…it is a deep-dish pizza from Uno with both broccoli and spinach on it. I don't normally like veggies on my pizza, but somehow it just works on this one! I used to order from Uno's a lot because they deliver to my house. How dangerous is that??? Good memories :) LOL

Mickey/CCHT 2011-11-30 20:22:32 -0600 Report

I know, right! We live too far out of town to get delivery, or I would be in big trouble!! It would make it too easy!
Never been to an Uno's, I wonder if they have one in the city by my brother, will have to ask him.
