Anyone have any experience with the low carb pastas like Dreamfields? Not for nothing but my wife makes the most killer tuna noodle casserole ever, and I simply can't give it up.

Dreamfeilds pasta is awsome! It's the only kind I will buy. I can eat a pretty big serving, say 1.5 cups of it and my numbers almost will not budge. Plus it tastes really good. I love it by itself too. Just a bit of butter, salt, pepper, garlic and parmesan. Yummy!

Here it is. The difference is she uses more tuna than the standard recipe and 4C seasoned breadcrumbs. I guess you'd call it a "Tuna Lover's" noodle casserole.

2 cups of the pasta of your choice.
3 cans chunk light tuna packed in water (drained)
1 8oz bag of shredded cheddar
1 can condensed cream of mushroom soup
Seasoned bred crumbs

Cook pasta to aldente.
Mix tuna, mushroom soup, and 1/2 of the cheese in a bowl.
Drain pasta and add it to the mix in the bowl.
Mix well, and empty into a baking pan.
Top with the remaining cheese, and breadcrumbs (up to you)

Preheat oven (or toaster oven) to 375.
Bake for 15 minutes or until cheese is melted.

We're having it tonight. We've used different cheeses but usually use cheddar. Nacho Mix was interesting, and we're on the fence about Mozzarella (we hadda try it since I'm so Italian).

I'll get the details from her and post it here. Its very similar to the standard tuna casserole with cream of mushroom soup in it, but she has added some things, and made adjustments.

Matty: would you wife be willing to share her recipe? It was a childhood favorite of mine, but when I tried to recreate it from memory of what I saw my mother do, it just wasn't as good. Carol

I agree try the alternate pastas. Here is what I also suggest though Mr. Music Man with the good voice! Eat just a large fist size serving. Wait a couple of hours and eat another one. We can have carbs just not so many at one time.

I'm not thrilled with my voice! I have been a guitarist for 40 years, and never sang a note until this year, and even then because I needed to develop an act so I could make money. Thanks for the compliment. I guess all the hard work is paying off. ;)

Love Dreamfields (available in our local grocery stores)!!! There are often coupons in diabetic magazines and on line … do a search on Google or your favorite search engine(s).

There is also a mushroom based pasta that I don't remember the name. If that can be found perhaps that could be substituted for the noodles. I as I remember i think it would more easily found in oriental grocery stores.

Interesting, James. I live here in the land of oriental everything and have never heard of it. If you get a lead, let me know, cause I really like mushrooms. I'll ask around locally and let you know if I find anything.

I have not tried that brand, but anytime I make a pasta dish, my daughter LOVES spaghetti(I can not not eat if I make!LOL) and tuna noodle salad. So I have used Barilla Plus. It comes in a yellow box. It is a mulitgrain pasta with protein and ALA Omega-3 added. It does not spike my #'s and it's really good. Even my picky teenager likes it!
I hope you find something that works for you, you might have to experiment to see what works best. Good Luck!

My daughter has no choice! I don't buy the bad stuff anymore so she is forced to eat better! I unfortunetly taught her bad habits all her life, so I'm fixing both of us now!!

I've had good experiences with quinoa based pasta, but not with rice based ones. That's cause my BG over reacts to rice.

You may need to try a few and see what works best for YOU, but you can probably make a good guess by looking at what's in the pasta and whether or not it's something you can eat w/out a big BG jump.
