Ok guys I'm making a pumpkin pie from the new diabetes diet cook book !!!!!! This should be interesting !!!

Sounds great! A great way to make a "healthy" desert is to make sweet potato pie. I do use a regular pie crust, didn't know there was another kind, but I use splenda blend for baking instead of regular sugar and you can't tell the difference.


About 4 medium sweet potatoes, boiled and peeled. (It's easier to boil first then peel.)
Cinnamon to taste
Cloves to taste
Nutmeg to taste
1 tsp vanilla
2 eggs
1 can evaporated milk
2 - 9 inch deep dish pie crusts

Put all ingredients in a mixing bowl or food processor and blend until smooth. Pour into pie crusts and bake about 45 minutes at 325 until pies are set.

You can use whatever spices you like, I use cinnamon, but pumpkin pie spice is good, too!

Healthy pie crust
1/2 cup quick oats
2 scoops soy protein powder
1/2 cup spenda
3tbl milled flaxseed
3/4 cup water
Spray pie plate with cooking spray
Mix oats soy protein powder, splenda, and flaxseed
Add water
Crust : 45 cal,5 grams protein, 3 carbs , 1 gram fiber, 2 g monounsaturated fat & 6000 lignin antioxidants
Don't cook untilyou cook pie

1 15 oz can pumpkin pie filling
3/4 cup splenda
2 tsp cinnamon
1 tsp nutmeg
1 tsp Ginger
1pkg fat free cream cheese
1/2 cup liquid egg whites
Mix pumpkin splenda cinnamon nutmeg and Ginger
Warm cream cheese in microwave until soft mix into mixture add egg whites
Bake at 400 degrees for 10 min lower temp to 350 and bake for another 20 min. Or until fork is clean when poked
Cool and top with cool whip

Oh, thanks!! I didn't like the price I had to pay when I bought a gluten free crust resently. This would do it!

I changed the ingredients it originally called for fat free mozzarella cheese and I thought the cream cheese sounded tastier so not real sure about the calories on the pie but it's good !!! Not teal sweet but good !!

It is really good !!! I made a change and should have cut down the egg whites but it taste good !!! Like thanksgiving !!!!!

I found a recipe for pumpkin pie pudding @ taste of home. It is prepared im the crock pot, so you can put it in and go do something else.I made a few changes to cut the carbs.
1 15oz can pumpkin
1 12oz can evaporated milk
3/4 cup sugar ( use splenda or something similar instead)
1/2 cup biscuit/baking mix (cut this back to 2-3 T or even leave it out entirely)
2 eggs - beaten
2 T melted butter or margerine
2 1/2 t pumpkin pie spice
2 t vanilla flavoring

Combine all in a large bowl, and pour into a greased (sprayed) crock pot.
cover and cook on low for 6-7 hrs or til thermometer reads 160.
Serve with whipped topping if desired.

A friend of mine was gluten intolerant, so I made this w/o the bisuit mix-it tasted fine, but was a little bit watery in the bottom. I made it today at home and used 2-3 T of self rising flour (I'm out of bisquick) and it turned out great.
Splenda is rather pricey, so I use it, but am rather stingy on the measurement. It's probably a little more than 1/2 cup that I use-again it works great.
Today, I had about 5 1/2 -6 hrs before I needed to have this ready, so i turned the crock pot on high for the 1st hour, then to low right before I left for church. When I got home, it was done.
