HELP! Don't have a clue!

I am a somewhat picky eater. I HATE veggies. I literally GAG on them. I like green beans, corn, peas, spinach (as long as its cooked in something-like hidden),
tomatoes (as long as they are cooked and in something), pickles but not cucumbers. any suggestions??

Well, at least you like a few vegetables. Ever try edamame / soy beans? I'm not going to lecture you on how important some vegetables are. Take a look at lots of recipes and glycemic index of different foods. You'll find something, I'm sure.

I know what Canta means, I can only eat vegs if they are seasoned properly, that seems to make them more palatable to me. I have been a meat and tator guy all my life and now the adjustment is very hard at times, but I know it will get better if I will stick it out. Hope yo do too.

I love veggies, and think they taste best roasted. Red peppers, green beans, asparagus, squash, onions, cauliflower, carrots, parsnips, garlic. Whatever you can eat, just cut, gut, wash, dry, toss in olive oil, spread in a single layer on a baking sheet and bake or broil. I broil the red peppers, then pull off the black skins. Roast everything else. Roasting makes the veggies taste sweet. Bake tomatoes by cutting in half, add some oregano and/or thyme and/or rosemary, dot with butter and bake for 20 minutes or so. Keep at it and you'll find some you can eat and hopefully enjoy. Good luck.

Unfortunately fruit has a lot of carbohydrates in them. Not good for trying to keep one's BG numbers under control unless eaten in only limited amounts. Veggies like Canto mentioned she will tolerate are still her best bet to keep her BGs under better control.

I have been told to stay away from everythng white, to go to yellow rice, to wheat bread, and you still need to eat fruit or fruit smoothies. Just rememberto stay away from white food.

To get veggies you can add them to your smoothies, like carrots, cucumbers, and red cabbage along with your fruit. You can not taste them and now you are getting both.
I hope this helps you. I use wheat everything even my pasta, brown rice which I add to homemade soups or my stir fries.. Good luck Lynette

Try to doctor them up with spices and herbs. Sprinkling them with Mr. or Mrs salt free products give flavor. Try hideing veget in mashed potatoes. The taste of home grown tomatoes taste good to me.

That's a pretty good idea, but mashed potatoes are carbs. I always add navy or catalonia beans to the mashed potatoes to up the fiber and you can still add the veggies to the mashed potatoes. You will be receiving two good nutritious ingredients for your body instead of one.

Ok, there is a way you can try, that might help. As a chef, I use this method a lot for kids. When you cook, you need to start with a good base called the Mirepoix, onions, celery and carrots. If you take them and puree them in the food processor, they literally melt away during the cooking process but leave their great flavors and nutritional qualities behind.
Also, you can do the same with what is known as the trinity for Cajun, southwest and a few other cuisines.(onions, celery and green pepper.)
Buy whole peeled organic tomatoes and puree them. If the seeds freak you out, press it through a mesh strainer to remove them. I have found that kids are often victims of both the texture and the sight of something unfamiliar. Hiding the veggies has made serving children fun and easy.
You can also cook with things like organic pureed baby foods. Carrots, Spinach, Beets, Corn are all available. They can be added to dishes and will be undetectable.

Sorry can't help you out here. I live for veggies. Any type of canned so called veggies, I wouldn't put into my mouth. Mine have to be fresh. Besides since I'm a vegetarian it's all I eat. If you like ketchup, then you like tomatoes. If you like french fries, or onion rings, then you like veggies What I just listed are just the tip of the iceberg of vegetables that you may or may not eat, and don't realize that it's a vegetable, or made from vegetables.

Girl I'm the same way, but don't eat meat. Most veggies I can't stand either, but I'm learning little by little. Love potatoes, pasta, & bread (all a no,no for me, even 100% wheat items). Hate corn, peas, cooked carrots (no biggie, most diabetics can't eat them). Won't touch brocolli and caulliflower (come on, who eats trees & bushes?). Love peppers of all kinds, onions, & tomatoes and most beans. So I'm a little better off then you, but I'm tryin' to change, your should too. Biggest save for me is eating quinoa (no taste, takes on taste of food's it is cooked with. A super-food.

We always encouraged our boys to be "food explorers" Canta.
That meant that we (their mother and I) had to be food explorers too. I remember eating some things that I hated as a kid, and actually tasted pretty good now that my tastes have matured. That does not mean that you have to eat EVERY veggie, but maybe your taste buds have matured over the years and you might very well enjoy (or even tolerate) certain foods you had previously rejected as too yucky.

Eat the veggies you like but be aware that corn, potatoes and peas are starchy and you have to watch the carbs. Tomatoes are actually a fruit and contain carbs, enjoy them in moderation.

I'm not a huge fan of all veggies either. You do like some it seems - so use those. No one says you "have" to eat certain veggies if you don't want to. Eat what you like and forget the rest.

I'm right there with you on not liking veggies…I just dont like most of them. To get the veggies in me I'm supposed to have I'm going to get a nice powerful blender and drink them. I think it will be a lot easier to drink a glass of veggies than eating a bunch of them…and I'll throw in a little fruit to improve the taste.

Veggies are my favorite thing to eat… yum (if you don't like veggies, try dipping them in a fat free ranch dressing)
