my mother is a type to diabetic and would love to learn some diet plans that would be easy for her

I don't believe in diets. I believe in eating the way a body was meant to eat.

Instead of a diet plan, how about three simple rules.
(1) the following should be completely eliminated from the home and should not appear on any ingredient list: soy (including different forms like TVP, textured vegetable protein and "soy protein isolate"), trans fat (any partially hydrogenated oils), high fructose corn syrup or juices from concentrate.
(2) All of your carbohydrates should come from fresh fruits, non-starchy vegetables and nuts. There is no grain requirement for the human body and your protein should not be wrapped in breading or flour.
Naturally, this means sugar must go. If sugar is one of the first 8 ingredients on an item, it is a TREAT, not something that should be eaten regularly. This will include things like barbecue sauce. A cookie once a month won't kill you, but a cookie every day is a nono.
(3) Don't stuff yourself.

No tedious need to count grams of anything or calories. No worrying about "comfort eating." Most people who do this experience an amazing turnaround in blood sugar control, weight, blood pressure and a host of other conditions.

Howdy Misty, WELCOME to DC!

I am keeping my BG under control by doing a low carbohydrate high protein eating plan. I control my diabetes by following that plan and don't use medications of any type to try to control it. I have also lost about 40 lbs in 6 mos with this plan.

Not every type 2 will be able to control their diabetes by what is eaten alone, but if one has to use medication to control it, I believe the low carb high protein eating plan helps control the Blood Glucose levels without a lot of trouble.
