Vegan and Vegetarian

Which diet sounds better for a diabetic? If you choose to do both, then what will you eat? I also love eating dairy, so I heard that there are vegan dairy products. Has anyone ever heard of Silk? It's like drinking milk, but it is like drinking milk after you eat your cerial.

The trick with true vegan is that nothing is cooked above 150 degrees. I toyed with the nut meats and dehydrator heated foods, but found I craved hot meals more and didn't find it something I would stick with.

I am not 100% sold on strictly vegetarian diet, but many people do it. I enjoy my animal protein and while I am trying to get rid of dairy and gluten from my diet now, I eat a lot of veggies. You still have to choose wisely, because it's vegetarian, doesn't always mean low carb.

What I recommend is finding something that you can live with, because that is what you have to do. Combining the things you enjoy from different ways if eating and making something work for you that you like is very important.

I read two books written by Dr. Joel Fuhrman: Eat to Live and Disease Proof your Child. After weighing the pros and cons, I decided to take his 6 week vegan challenge. It really isn't as hard as it seems, it's just a different way of thinking. Instead of thinking "hmmm…what can I eat with my meat tonight?" think "How many vegetables or fruits can I pack into one dish?" My family has since gone back to eating some meat, but I found some vegan dishes I loved and I still make.We also still drink only Almond Milk. I make a lot of dishes with beans in them, and roasted vegetables are a favorite in any form. In fact, tonight I am making mashed potato and roasted vegetable enchiladas. One of our favorites!

During my lifetime I have been both, started out as a vegetarian and later became a vegan!
The choice is a matter of preference, try them both out and see how you feel.

Just remember that protein is essential to your health and well being.

Certain medications require that they be attached to protein molecules to travel throughout your body to do their job, so if you are on any type of medication, discuss this with your doctor.
Also understand that the human body doesn't treat all sources of protein the same
(animal or vegetable) as far as absorbtion is concerned.

yes i have heard of silk milk it is good they donot only have soy milk only for once they also have almond milk as well now and really you canot drink only one glass as good as it is at least i could not i dranked the whole carton.

I personally wouldn't touch anything with soy in it, which is what Silk is. Too much GMO stuff in soy products!

Yes I have to agree with that. I don't do soy anymore for that very reason. And that is why I make my own almond milk.

GMO is shorthand for "Genetically Modified Organism" something of great controversy. Some people call food grown from a GMO "Frankenfood" kinda like Frankenstein's monster was a being composed of parts from many different people.

People who promote GMOs say they are useful to keep diseases and pests at bay and to produce larger crops. Those who are against GMOs worry about the unintended consequences of the use of those foods for human consumption.

I saw how they make Silk (soy milk) on "How Do They Do That?" It's equal parts soy powder and sugar, to 2 parts water. That was when I said "never mind".

Remember low carb is low carb high carb is high carb
Some things that seam good endup running high in carbs
I have never had Silk so I dont know whats in it

Both diets will do wonders for your levels. They are hard roads to travel, but if you have the right support you will do well and be amazed.

I make my own "milk" with almonds. It is great, has good fats and is low carb. Silk does an almond and soy milk. I like them both, but make my own.

I'd love to make my own almond milk, but how do you count the carbs???

You count the carbs of all of your ingredients, then you divide it by the serving size you want to use. My almond milk is about 4 cups of milk with 3/4 cup of almonds, and 2T of Agave. That is where the carbs will come from. The rest is water and vanilla. If you use natural vanilla, there is not carb count there. You can use this premise for any of your home cooked meals.

I am used to having to count carbs for dishes without nutrition info. I do it just like you described. However, I'm wondering how it work out as I'm assuming you strain the pulp out so I'd think that would alter the carb count. I figure your count must work for you if you keep using it though…

I do strain out most of the pulp (turn it into almond flour) So I think what I am really removing would be more of the fiber content. I don't know for sure. But it is close enough to not worry about it. At least for me. I am type 2 and not on insulin, so my counts don't require that minute scrutiny.

You are correct in that the majority of what you are removing is fiber and protein. That, in effect, would increase the concentration of carbs in the milk. I really have to be pretty precise in my carb counting as I am on insulin. I did find one recipe for homemade almond milk that calculated 7 carbs per 8 ozs which is more than I'd like considering commercial unsweetened almond milk is 1 or 2 carbs per cup. I'm glad you have something that works for you.

Well, if I have two table spoons of agave that is 28g of carb. That is split up into 4-6 servings so I guess you are looking at 6-8 per serving. You can try it unsweetened and that would go to almost zero. I do keep a good bit of pulp in my milk, it requires shaking before drinking. But I like it that way.

That sounds like a good idea. You could use powdered stevia as well, as you blend it for about 2 minutes, that would be plenty of time to make the stevia blend in.

That would work. I'm lazy, that's why I like the liquid stevia, easier to mix! I have found that the NOW brand of liquid stevia (esp the organic one) works great for me. I did like the powdered Vitamin Shoppe brand one too and the price was reasonable.

If I can ever figure out how to steep my own, I will be in heaven. I grow stevia in my garden but so far, I have only used it ground up in cold drinks.

I am new to all this. I have been a diabetic since 2008 and have been fumbling around finding my way. Last week was told I had cardio myopathy. Lots of adjustments to make. I didn't know that you could grow stevia. I am guessing they sell grinders in a kitchen store? Where do you find stevia seeds/plants?

I found this. Only thing is it says, "take a measured portion" and mix it with pure USP grain alcohol (no amt given either)

Q) Can I make my own Stevia Extract?

A) Yes. A liquid extract can be made from the whole Stevia leaves or from the green herbal Stevia powder. Simply combine a measured portion of Stevia leaves or herbal powder with pure USP grain alcohol (Brand, or Scotch will also do) and let the mixture sit for 24 hours. Filter the liquid from the leaves or powder residue and dilute to taste using pure water. Note that the alcohol content can be reduced by very slowly heating (not boiling) the extract and allowing the alcohol to evaporate off. A pure water extract can be similarly prepared, but will not extract quite as much of the sweet glycosides as will the alcohol. Either liquid extract can be cooked down and concentrated into a syrup.

You should be able to buy vanilla beans in health food stores with a bulk section. I've even seen them in jars in the spice aisles of some stores.

I tried it in water, but it didn't come out too good. I need measurements I guess. My water one got kind of slimy and gross. I also did it for more than 24 hours. So I may have to got get a little vodka and try it out that way.

I tried Silk - got the bathroom runs!! Tastes ok, but I can't deal with 6 times a day - LOL! My sis likes Almond Milk (Has D2 as well) and my niece (not a sweet one) like Rice Milk.
