I was diagnosed about a year ago and I see my endocrinologists quarterly throughout the year and not once has she mentioned a diet. I was told it was ok to eat how I wanted as long as I took enough insulin to cover my meals. Is dieting really a crucial part of being a type 1 diabetic?

My endo told me the same thing. No need to diet, just eat a healthy balanced diet and eat whatever I want (always in moderation) and just take the insulin needed to cover it. I'm a small person anyways so I bet he probably wouldn't have mentioned a diet to me out of fear of me punching (I was hugely pregnant when I was diagnosed and sent to see him)
